Weight Watchers Freestyle 0 Point Memorial Day Party Menu

Since Memorial Day is starting off summer in just a couple weeks, I want to get a head start and start planning our Memorial Day menu now since it will be here in no time. We will be hosting the party this year and I want our menu to be completely 0 points. The reason? I want to sample all the dishes that others will be bringing. And yes, that includes desserts – which always makes me happy.

Hopefully, some of these recipes will sound tasty enough for you to make or take to your summer get-together. I will include a grocery list for this menu. You can find the downloadable link at the bottom of the post. So, let’s see what the spread will be for this Weight Watchers Freestyle 0 Point Memorial Day Party Menu.

Weight Watchers Freestyle 0 Point Memorial Day Party Menu

0 Point Weight Watchers Freestyle Appetizers

Marinated Italian Shrimp

2 Lbs. Large Shrimp, peeled and deveined (0 Points)

3 garlic cloves, minced (0 Points)

2 tablespoons of balsamic vinegar (0 Points)

1/4 cup of tomato sauce (0 Points)

1 tsp. of red pepper flakes, more or less to taste

1 tsp. dried basil

1.5 tsp. onion powder

salt and cracked black pepper to taste

Skewers (These are the ones we use) Though if you do prefer to use bamboo skewers, you must soak them first before using.

DIRECTIONS:

  1. Stir everything but the shrimp together thoroughly.
  2. Add shrimp.
  3. Marinate for 45 minutes to 1 hour (no longer).
  4. Thread shrimp head and tail onto skewers and grill over medium heat until shrimp are cooked. About 2-3 minutes per side. Discard marinade.

This amount feeds about 4 people. Double or triple according to how many people will be attending. You can grill before guests arrive and keep at room temperature. Refrigerate any leftovers – but there won’t be.

Marinated Italian Shrimp

Spicy Shoepeg Corn Dip with Crudites

1 cup of fat free plain Greek yogurt (I prefer Fage) (0 Points)

5 tablespoons of fat free sour cream (1 Point)

1/4 cup of Kraft Fat Free Shredded Cheddar Cheese (0 Points)*

1/4 cup of Kraft Fat Free Shredded Mozzarella Cheese (0 Points)*

1/2 cup of red bell pepper, diced small

1/2 cup of green bell pepper, diced small

1 jalapeno pepper, minced

1/4 cup of diced red onion

Can of shoepeg corn, drained well

1 tsp. of parsley

1 tsp. of garlic powder

Cracked black pepper & salt to taste

5 green onions, diced (reserve for top garnish)

DIRECTIONS:

  1. Combine everything together and mix well.
  2. Serve with crudites: mushroom caps, pepper slices, celery sticks, carrot sticks, cucumber chips, carrot chips, miniature peppers, and radish chips.
  3. Garnish with diced green onions.

Since this dip will serve at least 6 people (if not more), it is still 0 points per serving despite the 1 measly point for the sour cream. So enjoy.

Spicy Shoepeg Corn with Crudites

Also, if you cannot find Kraft Fat Free Shredded Cheeses where you live, I got you covered. You can substitute the fat free cheese with a reduced fat Cheddar Cheese (one that is about 3 Points for 1/4 cup). Though, it will no longer be 0 points per serving, it will still be extremely low.

Pollo Mexicano Salad with Ranch Dressing

3 boneless chicken breasts, grilled and sliced into strips

2 bags of salad mix, romaine, Italian or spring mix

1 large red onion, chopped

1 red, yellow and orange pepper, chopped small

2 cans of black beans, drained and rinsed

1 can of Mexican style corn, drained

1/4 cup of green onions, sliced

2 limes, sliced into quarters

Walden Farms Chipolte Ranch Dressing

DIRECTIONS:

  1. Mix everything but the limes and dressing ingredients together thoroughly.
  2. Top with dressing. Garnish with limes on top of salad.
  3. Refrigerate until guests arrive. This makes 4 Servings at 0 SmartPoints per serving on the Blue and Purple Plans. On the Green Plan, it’s 8 SmartPoints per serving. Enjoy!

  3. Mix Sweet Lime Dressing together and drizzle over salad mixture in cups.
  4. Sprinkle up to 1/4 cup of fat free feta onto the top of each cup.
  5. Garnish with mint if using.

Cheer Up Peachy Keen Soup

4-5 cups of peaches, peeled and cut into chunks (0 Points)

2 tablespoons of Splenda (0 Points)

2 cups of fat free plain Greek Yogurt (I prefer Fage) (0 Points)

1 teaspoon of lemon juice

1/8 teaspoon of vanilla extract

1/8 teaspoon of almond extract

Mint, garnish (optional)

7 tablespoons of toasted almonds (1.5 tsp of almonds per cup) (0 Points) We use this handy dandy tool for roasting nuts.

Cinnamon Splenda Mixture – Combine 1/3 cup of granulated Splenda with 1 tablespoon of Cinnamon together. (0 Points)

Pepperidge Farms Cinnamon Baked Graham Goldfish – 3 per cup (0 Points)

Clear plastic tumblers

DIRECTIONS:

  1. Combine everything except the last four ingredients into a blender and blend thoroughly.
  2. Refrigerate until chilled – at least 3 hours.
  3. Pour into clear plastic cups.
  4. Top with 1.5 tsp of toasted almonds per cup, 3 Cinnamon Baked Goldfish and mint if using it.
  5. Serve cinnamon Splenda mixture on the side for extra sweetness.

This is a soup that children love and, of course, they can have lots of cinnamon or cupcake flavored goldfish to make it extra good! Also, this makes about 6 servings in the clear plastic tumblers.

Roasted Scallops with Sweet Fiery Pineapple Cucumber Salsa

3 lbs of Sea Scallops (0 Points)

1 onion, chopped small

1.5 teaspoons of garlic, minced

1 teaspoon of salt

1.5 teaspoons of fresh cracked pepper

1 teaspoon of dried parsley

I Can’t Believe It’s Not Butter Spray

Vegetable Cooking Spray

Salsa Ingredients:

2 cans of pineapple tidbits, drained

1 large cucumber, seeded and diced small

6 plum tomatoes, chopped small

2 jalapeno peppers, seeded and minced

1 red onion, diced small

2-3 tablespoons of Splenda

5 tablespoons of lime juice

fresh ground pepper and salt to taste

DIRECTIONS:

  1. Preheat oven to 400 degrees.
  2. Pat scallops dry.
  3. Spray a 13 x 9 baking dish with vegetable cooking spray. Arrange scallops in a single layer in dish.
  4. Spray all the scallops liberally with I Can’t Believe It’s Not Butter Spray.
  5. In a separate bowl, combine onion, garlic, salt, pepper and parsley and mix together well. Spread mixture all over the top of the scallops.
  6. Bake uncovered for about 12-15 minutes. Less if the scallops are on the small side.
  7. While scallops are cooking, in a separate bowl combine, pineapple, cucumber, onion, peppers and tomatoes. Season with ground pepper and salt to taste. In another bowl combine lime juice and Splenda together and mix well. Adjust to your taste preference with more lime juice or Splenda.
  8. Pour juice mixture into salsa ingredients and mix well.
  9. Refrigerate and serve with scallops. Serves 4 hungry people.

Overstuffed Zucchini Boats

Overstuffed Zucchini Boats

Overstuffed Zucchini Boats are a perfect addition to your party menu and the stuffing can be made ahead of time. Stuff the boats as high as you can for a 0 point dinner! Ahoy!
Ingredients
  • 4 Large Zucchini
  • 1 lb head of Cauliflower, cut into small florets
  • ½ cup of fat free plain Greek Yogurt
  • 4 oz of Kraft Shredded Fat Free Cheddar Cheese
  • 4 oz of Kraft Shredded Fat Free Mozzarella Cheese
  • 1 cup of canned shoepeg corn kernels
  • 1.5 cups of shredded cooked white meat chicken
  • ½ tsp. of salt
  • 1 teaspoon of ground pepper
  • Vegetable Cooking Spray
Instructions
  1. Preheat oven to 400 degrees.
  2. Slice zucchini down the middle lengthwise and scoop seeds out. This is easiest to do with a small spoon.
  3. On a parchment paper lined baking sheet, place zucchini cut side down and spray them lightly with vegetable cooking spray.You can salt and pepper them if you'd like. Bake for about 5 minutes and then remove. Turn zucchini cut side up and let cool.
  4. Steam cauliflower florets until tender in microwave or on stove top. Drain when tender (if a fork can break a floret in half, it's done).
  5. Mash cauliflower and add yogurt and cheeses and mix thoroughly.
  6. Add corn, chicken, salt and pepper. Mix well.
  7. Divide this mixture evenly into all zucchini halves.
  8. Bake 10 minutes until browned on top.

This entire recipe is 0 Points. You can easily double or triple this recipe as well. Feel free to substitute the chicken and use cooked ground turkey or chicken breast. You can even use shrimp instead of chicken too. Also, you can use white meat rotisserie chicken to save time by not having to cook the chicken yourself.

I think this is a great party menu that you can use anytime, not just Memorial Day. I especially like that so much of it can be prepped ahead of time. If you want some foods to make that are kid friendly or for others that are not currently watching their weight, here is an awesome menu that is not just delicious but inexpensive too.

Although I did not mention the Vidalia Chop Wizard above, I find that it is a H-U-G-E time saver in the kitchen. I actually have 2 because either my husband or myself use it throughout the day. I got the second one because every time one of us looked for it, it was in the dishwasher. It is also easily kept in a drawer so it does not take up hardly any space in the kitchen.

I know you will enjoy all 7 of these recipes. I like them even more since they are all 0 points. This makes having a cocktail or a satisfying dessert even more enjoyable and I do not have to keep stopping to track my points.

Also, don’t forget, if you cannot find Kraft Fat Free Shredded Cheeses where you live, you can substitute the fat free cheese with a reduced fat Cheddar Cheese (one that is about 3 Points for 1/4 cup). Though, it will no longer be 0 points per serving, it will still be extremely low. I know my Canadian friends can’t find Kraft fat free shredded cheeses, but hopefully you can find a reduced fat cheese to use instead.
