This week there are 4 new low point new recipes for the freezer. So get ready to do some cooking! This is a picture heavy post – so let’s see what low point freezer cooking meals are on Week 2’s menu.

Cheesy & Meaty Ginormous Egg Muffins
8 Large Eggs
2 Slices of Canadian Bacon, Diced
5 Slices of Land O’Frost Ham, Shredded
1/3 Cup of Fat Free Cottage Cheese
1/8 Cup of Fat Free Plain Greek Yogurt
1 1/4 Cups of Kraft Fat Free Shredded Cheddar Cheese
1 Each Red Bell Pepper + Green Bell Pepper, Diced
5 Green Onions, Snipped (Green & White Part)
Salt/Pepper To Taste
Vegetable Cooking Spray
DIRECTIONS:
- Combine everything into a blender and blend well.
- Pour egg mixture into 6 Texas Muffin Size Cups that have been sprayed with Vegetable Cooking Spray. I used this wonderful Silicone Texas Muffin Pan.
- Preheat oven to 400 degrees and cook for 20 minutes. If tops start to brown, reduce heat to 350 and continue cooking until a knife inserted into muffin comes out clean.
- Let cool completely for about 20 minutes and pop out of silicone pan and let cool on a plate or rack.
- When these are completely cool, I wrap them in Glad Wrap and put them into a freezer bag and store in the freezer. Defrost and reheat in a microwave oven until warmed through. For me it was 30 seconds.
- Each ginormous muffin is just 1 Freestyle Point per serving. Enjoy!

1 Pound of Ground Turkey Breast
A Teaspoon Each of Salt & Fresh Ground Black Pepper
1 1/4 Teaspoons of Splenda Brown Sugar Blend
1 Teaspoon each of Ground Sage & Ground Thyme
1/2 Teaspoon of Ground Rosemary
Pinch of Red Pepper Flakes
DIRECTIONS:
- Combine everything into a bowl and blend well.
- Form into 6 patties (try to keep all the same size).
- Preheat broiler and line a baking sheet with parchment paper. Put patties onto parchment paper and broil for 5 minutes on each side.
- To freeze them, cool completely and freeze in a freezer container with parchment between each layer.
- Thaw overnight in refrigerator and reheat in microwave.
- I have also frozen unmade patties the same way in the freezer. They will keep for a month, but they won’t last long (as you can see from picture below).
- All patties are 0 Freestyle Points. Enjoy!

4 Pounds of Boneless & Skinless Chicken Breasts
Salt/Pepper to Taste
Guy Fieri’s Award Winning Sugar Free Barbecue Sauce
Can of Pineapple Tidbits in Water, Drained
DIRECTIONS:
- Spray slow cooker with vegetable cooking spray.
- Place chicken breasts into slow cooker and season with salt/pepper to taste.
- Pour sugar free barbecue sauce on top of chicken.
- Put drained pineapples on top.
- Cook on high for 3-4 hours or on low for 6 or 8 hours.
- Shred the chicken using two forks and return to slow cooker.
- This makes 10 Servings at 0 SmartPoints on the Blue & Purple Plans and 3 SP on the Green Plan per serving. Each serving is about 6 ounces of shredded chicken. Enjoy!

I hope you enjoy these freezer meals. My husband loves Jimmy Dean sausage. After making these breakfast sausages, he said we will no longer be buying them. Which means – more work for me! But that’s okay at 0 Points per serving and about .50¢ per patty (much thicker and bigger than store bought), I’m all in! Not to mention, these are way healthier for sure.
