Here is a protein packed breakfast that will keep you full for hours and at only 1 Point per serving, have 2!
Ingredients
  • 8 Large Eggs
  • 2 Slices of Canadian Bacon, Diced
  • 5 Slices of Land O'Frost Ham, Shredded
  • ⅓ Cup of Fat Free Cottage Cheese
  • ⅛ Cup of Fat Free Plain Greek Yogurt
  • 1¼ Cups of Kraft Fat Free Shredded Cheddar Cheese
  • 1 Each Red Bell Pepper + Green Bell Pepper, Diced
  • 5 Green Onions, Snipped (Green & White Part)
  • Salt/Pepper To Taste
  • Vegetable Cooking Spray
Instructions
  1. Combine everything into a blender and blend well.
  2. Pour egg mixture into 6 Texas Muffin Size Cups that have been sprayed with Vegetable Cooking Spray. I used this wonderful Silicone Texas Muffin Pan.
  3. Preheat oven to 400 degrees and cook for 20 minutes. If tops start to brown, reduce heat to 350 and continue cooking until a knife inserted into muffin comes out clean.
  4. Let cool completely for about 20 minutes and pop out of silicone pan and let cool on a plate or rack.
  5. When these are completely cool, I wrap them in Glad Wrap and put them into a freezer bag and store in the freezer. Defrost and reheat in a microwave oven until warmed through. For me it was 30 seconds.
  6. Each ginormous muffin is just 1 Freestyle Point per serving. Enjoy!
