If there is one kitchen cooking “tool” that I think everybody should own, it is a slow cooker. In all my married years, I know for a fact that I have used it at least once every week, if not more. And I’ve gone through about 3 slow cookers. I think more people use them in the winter than the summer, but we use them just as much if not more in the summertime. More so since we moved to Florida. When we are not grilling, we are slow cooking. Or both, grilling meat or vegetables and making the main course or side dish in the slow cooker. Slow Cooker Mushroom Chicken Cacciatore
2 Pounds Chicken Cutlets, Boneless & Skinless
1 Onion, Chopped Small
2 Cans of Sliced Mushrooms, Drained
1 Each Red and Green Bell Pepper, Sliced
28 oz Can of Tomato Puree
¼ Cup of Chicken Broth
2 Garlic Cloves, Minced
3-4 Teaspoons of Splenda
1 Teaspoon of Crushed Red Pepper Flakes
2 Teaspoons Each Dried Oregano + Dried Parsley
1 Teaspoon of Dried Basil
Salt & Pepper, to taste
Vegetable Cooking Spray

DIRECTIONS:
- Spray a large saute pan with cooking spray. Add a few extra tablespoons of chicken broth when pan is hot.
- Add chicken cutlets and brown on both sides. Season with salt & pepper while browning. Slice chicken into chunks when browned. (They just need to be browned on both sides, they will finish cooking in slow cooker).
- Spray slow cooker with cooking spray. Add chicken, peppers, onion and mushrooms.
- In a separate bowl, combine remaining ingredients and mix well.

Jalapeno Pepper, Minced & Seeded

2 cups of frozen Corn Kernals
1 Jar (12 oz) of Trader Joe’s Pineapple Salsa
1.5 Teaspoons of Ground Ancho Chili Powder
Salt/Pepper to Taste
4 Ole Extreme Wellness High Fiber Low Carb Tortillas
Vegetable Cooking Spray
DIRECTIONS:
- Mix the corn and half of the salsa together in a bowl. Spoon half of this mixture in a slow cooker that has been sprayed with vegetable cooking spray.

Yes, they are as delicious as they look. They freeze well and if you are NOT going to eat the 4 buns that come in the package right away, freeze them. First I wrap each bun in plastic wrap and then I put them into a freezer bag. Lastly, these buns are full of protein, zero carb and gluten free as well. Win-Win-Win!
