Who doesn’t love fried foods? When I joined Weight Watchers, I needed to come up with a replacement for a lot of my favorite foods. Deep fried eggplant being one of them. Making this Weight Watchers experience a lifestyle change, I came up with a healthy replacement for deep fried eggplant. Now I make my deep “fried” eggplant in our air fryer. I think you too will enjoy my recipe for Weight Watchers Air Fried Eggplant.
Even better, you can use these air fryer eggplant patties if you want to make Eggplant Parmesan. I plan on doing this and using my Slow Cooker Italian Meat Gravy as the sauce. Yum!Â

How to Make Weight Watchers Air Fryer Fried Eggplant
1 Large Egg + 1 Egg Yolk
1/2 Cup Each Kraft Reduced Fat Parmesan Cheese + Toasted Wheat Germ
1/2 Teaspoon Each Dried Oregano, Dried Basil, Dried Parsley, Onion Salt + Garlic Salt
Large Eggplant
Vegetable Cooking Spray
DIRECTIONS:
- Preheat air fryer to 400 degrees.
- Whisk egg and egg yolk together and set aside.Â
- In another bowl, combine parmesan cheese, wheat germ and all seasonings.
- Slice the eggplant into 1/4″ thick slices. Dip slices in egg mixture and then into the parmesan cheese mixture.
- Spray air fryer basket with vegetable cooking spray.
- Working in batches, arrange eggplant slices in a single layer in the air fryer basket and spray the tops of the eggplant slices lightly with vegetable cooking spray.Â
- Cook for 5 minutes and flip to the other side. Spritz this side with cooking spray as well and cook for an additional 4-5 minutes.Â
- I got 8 slices from my eggplant which serves 4 People at 2 slices each.
- On the WW Personal Points Program, if you chose eggs as a 0 Point Food, each serving is 3 PP. If eggs are NOT a 0 Point Food, each serving is 4 PP.
