I don’t know what was so different about last week’s weight loss menu, but I was sure happy with the 2.5 pound weight loss this past week – especially after almost 10 months of dieting. Any large amount of weight loss before the holidays is great in my book!

Below is the menu for Week 41 –Â Weight Watchers Low Point Freestyle Diet Plan Weight Loss Menu – Week of 10/22/18.
Evening Snacks for Week 40Â – 10/15/18
Listed below are the evening snacks I ate on Week 40. Every week, I try to make it a point to carry over 4 points daily in case later in the week, I am in a position where my food choices are limited.
Monday:Â Â 7 Skippy PB Bites (3 Points)
Tuesday:Â Â Â Â 3 Wasa Light Crackerbread (2 Points), 1 Laughing Cow Cheese Wedge (1 Point)
Wednesday:Â Â 1 Cup of No-Sugar Added Sunny Orange Sherbet (5 Points)
Thursday:Â Â Â Pretzel PepperRidge Farm Goldfish (4 Points)
Friday:Â Â Â Swiss Meringue Clouds (0 Points) (RECIPE FOLLOWS), Berrylicious Sauce (0 Points) (RECIPE FOLLOWS)
Swiss Meringue Clouds
3 Egg Whites
1/2 Teaspoon of Vanilla Extract
1/4 Teaspoon of Cream of Tartar
3/4 cup of Granulated Swerve
DIRECTIONS:
- Put egg whites in a small bowl and let stand at room temperature for 30 minutes. Add vanilla and cream of tartar to eggs and beat on medium speed until soft peaks start to form. Sprinkle in sugar a bit at a time and beat on high speed until stiff peaks form and the sugar is mixed in and dissolved.
- On a baking sheet that has been lined with parchment paper, drop 4 mounds onto the parchment. Shape into “clouds” with the back of a spoon.
- Bake at 225 degrees for 1 to 1.5 hours or until they are set and dry. Turn oven off but leave them in the oven for 1 hour.
- Cool on wire racks. Store in an airtight container or fill with the Berrylicious Sauce recipe.
- These make 4 BIG clouds at 0 SmartPoints on the Blue & Purple Plan and 1 SmartPoint per serving on the Green Plan. Enjoy!

- Pour over the reserved berries and fold gently. Chill and pour over the Swiss Meringue Clouds.
- This entire recipe is 0 SmartPoints on the Blue, Green and Purple Plans. Enjoy!

I also make this and keep it in the refrigerator to spoon over nonfat cottage cheese for an awesome, protein packed snack for low points.

Dinner: Caprese Chicken (RECIPE FOLLOWS) (3 Points per breast), Broccoli Rice (0 Points), Asparagus with 1 Tablespoon of Land O’ Lakes Whipped Butter (2 Points)
Caprese Chicken
1 Tablespoon of Extra Virgin Olive Oil
Vegetable Cooking Spray
4 (6 oz) Boneless Skinless Chicken Breasts
Salt/Pepper to Taste
1/4 cup of Balsamic Vinegar
2 Minced Garlic Cloves
1 Pint of Grape Tomatoes, Halved
1/2 Each Teaspoon of Dried Basil + Dried Parsley
4 Slices of Sargento Ultra Thin Provolone Slices
DIRECTIONS:
- In a large skillet that has been sprayed with vegetable cooking spray, heat oil. Season chicken breasts with salt/pepper to taste and cook until golden and cooked through. Transfer to a plate.
- Add balsamic vinegar to the skilet along with the garlic. Cook for about 1 minute. Add in tomatoes and sprinkle with the basil and parsley. Simmer for about 7 minutes. Push tomatoes to the side of the pan.
- Add chicken back into the skillet and reheat through for about 3 minutes. Add 1 slice of provolone cheese to each breast. Cover lid to melt cheese.
- Spoon tomatoes over chicken and serve.
- This makes 4 servings at 2 Points per chicken breast on the Blue and Purple Plans and on 6 SmartPoints on the Green Plan. Enjoy!

Dear Dee Dee, I have been a returned Weight Watcher since January. I have been so stagnant and not lost much (same 10 pounds). I have never been able to follow the plan more than 3 straight days in a row. I am so happy I found you! I have been following you for about 3 weeks now, and I have never felt more successful! Your recipes are yummy and easy to follow! I have actually been able to stay on plan all week and not feel deprived at all! I love that you integrate some snacks like pizzelles and peanut butter crackers! I’m so thankful you make this page!
I have one question, sometimes you post menu items like this week’s refried beans and cheese turnovers. Are those things you have made or purchased? You usually use a brand name when you are referring to items I can buy but every now and then there is an item listed like this.

Audrey, I am so happy to hear this! I make my own refried bean and cheese turnovers. I just use the recipe for the two ingredient dough – divide it into 4 pieces (3 Points). Then I get Taco Ball Refried Beans (Fat Free) (0 Points), and Kraft Fat Free Shredded Cheddar Cheese. I simply spread as much of the refried beans as I want onto the dough circle, put a few dashes of Tabasco sauce on top and add 1/4 Cup of the Kraft Fat Free Cheese (0 Points). So the entire turnover is just 3 Points and they are very filling. Oh, I also spray the top of the turnover with vegetable cooking spray and bake in the oven at 400 for about 10 minutes. It’s just excellent. And great job Audrey – I wish you a lot of luck and I know you will get there!
