Swiss Meringue Clouds

  • 3 Egg Whites
  • ½ Teaspoon of Vanilla Extract
  • ¼ Teaspoon of Cream of Tartar
  • ¾ cup of Granulated Splenda
  1. Put egg whites in a small bowl and let stand at room temperature for 30 minutes. Add vanilla and cream of tartar to eggs and beat on medium speed until soft peaks start to form. Sprinkle in sugar a bit at a time and beat on high speed until stiff peaks form and the sugar is mixed in and dissolved.
  2. On a baking sheet that has been lined with parchment paper, drop 4 mounds onto the parchment. Shape into "clouds" with the back of a spoon.
  3. Bake at 225 degrees for 1 to 1.5 hours or until they are set and dry. Turn oven off but leave them in the oven for 1 hour.
  4. Cool on wire racks. Store in an airtight container or fill with the Berrylicious Sauce recipe.
