I am back with another post featuring 4 Pioneer Woman recipes remade the Weight Watchers Freestyle way. These remade recipes went from 44 Freestyle Points down to just 12 Freestyle Points for all 4 recipes. Not to mention, the servings sizes are much bigger.

Pioneer Woman’s Ranch Style Chicken
This is one of the Pioneer Woman’s most popular recipes. It is extremely delicious, but 18 points for a serving of chicken is not how I like to use my points.
Here is the original Pioneer Woman’s recipe.
Here is the new Freestyle point friendly recipe:
Freestylin’ Ranch Chicken
6 Boneless Skinless Chicken Breasts, Pounded Thin and Uniform in Size
1/3 Cup of Nature’s Hollow Sugar Free Honey – A M A Z I N G!
1/8 Cup of Dijon Mustard
Juice of Lemon
1 Teaspoon of Paprika
12 Slices of Turkey Bacon, Cut in half and fried
1 Cup of Kraft Fat Free Shredded Cheese*
Salt, Pepper & Crushed Red Pepper Flakes, to taste
*Also, if you cannot find Kraft Fat Free Shredded Cheese where you live, you can substitute the fat free cheese with Cabot 75% Reduced Fat Sharp Cheddar Cheese.
DIRECTIONS:
- In a bowl combine Nature’s Hollow Sugar Free Honey, Mustard, Lemon Juice, Paprika, Salt, Pepper and Red Pepper Flakes. Mix well.
- Put in chicken to marinate, toss sauce over chicken, cover and put in refrigerator for 2-4 hours.
- On a grill over medium high heat, grill chicken, flipping on both sides until cooked.
- When chicken is close to being done, lay 2 slices or so of turkey bacon on top.
- Top each breast with 2 Tablespoons of Fat Free Cheese.
- Each Freestylin’ Chicken Breast is now only 3 Freestyle Points! Enjoy.
PRINTABLE RECIPE

Spicy Dr. Pepper Shredded Pork
To begin, this recipe in it’s original form feeds 12 people (at least in my cookbook it does). And, since it doesn’t say just how many pounds the pork shoulder roast was, I counted it as 3 pounds. And I guesstimated that per serving it was just about 3 ounces of meat and sauce. At this estimation, per serving without any bun it is 9 Freestyle Points for 3 ounces of meat/sauce. Let’s get this bad boy down in points and up in ounces for a real sandwich!
Freestylin’ Spicy Dr. Pepper Shredded ChickenÂ
3 Pounds of Boneless & Skinless Chicken Breasts
3 Onions, Peeled and Quartered
2 12-ounce Cans of Diet Dr. Pepper
Salt & Pepper to Taste
6 Tablespoons of Canned Chipotle Chilies in Adobo Sauce
3 Tablespoons of Truvia Natural Sweetener with Brown Sugar Blend
DIRECTIONS:
- Put onions in bottom of a slow cooker. Lay chicken breasts on top of onions.
- Add salt and pepper to chicken.
- In a large measuring cup or bowl, combine Diet Dr. Pepper, Chilies and Brown Sugar Blend.
- Pour over chicken.
- Cover and cook on low 6-7 hours.
- Use two forks to shred the chicken and serve. At 6 servings, this now will be 1 Freestyle Point for 8 ounces of meat with sauce! Yum!

Now, to keep this at 1 Point per serving, pour this over cauliflower or broccoli rice. This would taste delicious poured over mashed cauliflower as well. If you want to have this on a bun, here are some choices:

Have you seen these buns yet? I don’t remember how I found out about them but I’m going to tell you they are extremely delicious. They are available on Amazon right here. Yes, they are expensive. Yes, they are as delicious as they look. They freeze well and if you are NOT going to eat the 4 buns that come in the package right away, freeze them. First I wrap each bun in plastic wrap and then I put them into a freezer bag. Lastly, these buns are full of protein, zero carb and gluten free as well. Win-Win-Win!

This recipe for the Pioneer Woman’s Pasta with Tomato Cream Sauce is a whopping 17 Points per serving at 6 servings.

Freestylin’ Fettucine with Creamy Mushroom Tomato Sauce
1 Bag of Al Dente Carba Nada Fettucine Noodles – Roasted Garlic Flavor
1 Small Onion, Diced
Small Can of Sliced Mushrooms, (Almost) Drained
2 Garlic Cloves, Minced
28 ounce can of Tuttorosso Tomato Puree, or any Brand
2 Tablespoons of Granulated Splenda, more or less to taste (We like it sweet)
1/2Â Teaspoon each of Basil, Oregano, Crushed Red Pepper Flakes, and Parsley
Salt/Pepper to Taste
1/2 cup of Fat Free Half & Half
1 Cup Kraft Fat Free Mozzarella Cheese
Vegetable Cooking Spray
DIRECTIONS:
- While pasta water is boiling, spray a saute pan with vegetable cooking spray. When pan is hot, add onions, garlic and mushrooms. Add a little bit of the mushroom liquid into the pan so nothing sticks. Saute until onions are translucent.
- Pour in the tomato puree, Splenda, spices and salt and pepper. Stir to combine and put on low/mecdium heat until hot.
- Taste and see if spices need to be adjusted. Add half and half.
- Warm through. Add 1/2 cup of Kraft Fat Free Mozzarella Cheese. Stir until cheese melts.
- Drain Fettucine and put in bowls and top with remaining cheese and sauce. This now serves 5 people (1.5 cups per serving + sauce)Â at just 7 Points per serving. Enjoy!

Here is the original recipe that was 10 Points per 8 servings.
Now here’s is a way quicker, just as delicious, bigger serving with less points version:
Freestylin’ Corn Casserole with Peppers
4 Cups of Frozen Sweet Corn, Defrosted
1 Red Bell Pepper, Seeded & Diced
1 Jalapeno Pepper, Seeded & Diced
1.5 Tablespoons of Land o’ Lakes Whipped Butter
1/2 Cup of Fat Free Half & Half
Salt/Pepper to Taste
Vegetable Cooking Spray
DIRECTIONS:
- Preheat oven to 375. Spray a casserole dish with vegetable cooking spray.
- Combine all remaining ingredients and mix together well.
- Put in casserole dish and bake for 25 minutes. Stir before serving.
- This serves 5 people at just 1 Freestyle Point per serving. Enjoy!
