I don’t know about you, but I really love takeout every now and then. But it can be expensive – not to mention sky high in SmartPoints. One of my favorite Chinese takeout recipes is Sweet and Sour Chicken. But, on the WW plan that I follow, a mere 3 pieces of chicken is 5 Points. I cannot just eat 3 pieces! So I experimented a bit and came up with this delicious Weight Watchers Tastes Like Takeout Chinese Pineapple Chicken. It’s not soaked in sauce, but it has just the right amount of sauce and sweetness along with lots of chicken, pineapple and vegetables.

 Tastes Like Takeout Chinese Pineapple Chicken
1 Tablespoon of Canola Oil
1.5 Pounds of Boneless Skinless Chicken Breasts-Cut into 1″ Pieces
Salt & Pepper to Taste
2 Red Bell Peppers, Sliced and Chopped
3/4 Cup of Pineapple Juice, Unsweetened
1/4 Cup Soy Sauce
1/4 Cup Swerve Brown Sugar Substitute
2 Tablespoons Hoisin Sauce
2 Cloves Garlic, Minced
1.5 Teaspoons of Cornstarch
1.5 Cups of Pineapple Chunks or Tidbits
Sliced Green Onions
2-3 10 Ounce Bags of Frozen Riced Cauliflower, Cooked
Vegetable Cooking Spray
DIRECTIONS:
- Spray a large skillet with vegetable cooking spray and place over medium high heat. When pan is hot, add in oil. Season chicken with salt and pepper to taste. Cook chicken, turning occasionally, under golden – about 8 minutes. Stir in bell pepper and cook until tender, about 5 minutes.
- In a small saucepan, combine pineapple juice, soy sauce, brown sugar, hoisin sauce and garlic and bring to a simmer. Make a slurry: In a small bowl, whisk together 1.5 teaspoons of water and the cornstarch until combined, then whisk this into the pan with the pineapple juice mixture. Cook until thickened, about 5 minutes.
- Pour sauce over the chicken and simmer for 3 minutes. Stir in the pineapple and sliced green onions.
- Divide cauliflower rice among 4 bowls and divide chicken mixture evenly among the bowls.
- On Weight Watchers Blue Plan, this is 3 Smartpoints; on Weight Watchers Green Plan, it’s 7 SmartPoints and on Weight Watchers Purple Plan, this is 3 SmartPoints. Enjoy!
