Weight Watchers Instant Pot Tuna Noodle Casserole Recipe

Now that summer is here, I have a delicious Weight Watchers Instant Pot Tuna Noodle Casserole Recipe to share with you. My favorite part is that this delicious family meal makes a lot and is perfect for leftovers the next day. And, this version of the classic Tuna Noodle Casserole recipe takes only about 5 minutes to prepare and only 20 or so minutes to cook.

Besides sweet tea and sugar free popsicles, my other two favorite things in the kitchen are my slow cooker and my instant pot. And I plan on using them alot to get out of the kitchen quickly this summer.

Weight Watchers Instant Pot Tuna Noodle Casserole Recipe

Butter Flavored Cooking Spray

2 Tablespoons of Land O’Lakes Whipped Butter

3 Large Carrots, Diced in Bite Sized Pieces

1 Teaspoon Each of Salt and Pepper

2 Garlic Cloves, Minced

1/4 Cup of All Purpose Flour

2 Cups Each of Fat Free Chicken Broth + Fat Free Half & Half

8 oz of Extra Wide Whole Wheat Egg Noodles*

4 (5 oz Cans) of Solid White or Chunk Light Tuna in Water (Drained well)

2 Tablespoons of Fresh Lemon Juice

2 Cups of Frozen Peas

How to cook Weight Watchers Tuna Noodle Casserole Recipe in the Instant Pot

  1. Select the saute setting on your Instant Pot/Pressure Cooker and adjust the heat to high. Spray base with butter flavored cooking spray and add in the whipped butter. When butter is melted, add in the diced carrots along with the salt and pepper. Cook until carrots are tender – about 10 minutes.
  2. Add in garlic and continue cooking for 1 more minute. Stir in flour and blend well. Add broth in 1/2 cup at a time and whisk to combine with the flour mixture. Bring to a boil and keep stirring until it becomes thickened.
  3. Stir in fat free half and half. Add in egg noodles. Lock the lid and close the vent. Select manual for the setting and adjust the pressure to high. Set time for 3 minutes. When finished cooking, allow the pressure to release for about 4 minutes (natural release) followed by quick release. 
  4. In a bowl, combine the drained tuna and the lemon juice. If desired, you can add in more salt and pepper. Select saute setting and adjust to low heat. Stir the tuna mixture and the peas into the noodle mixture. Cook until well heated. 
  5. This makes 6 large servings at 7 Blue SmartPoints, 9 Green SmartPoints, 3 Purple SmartPoints per serving. Enjoy!

Optional Add-Ins or Substitutions for Weight Watchers Instant Pot Tuna Noodle Casserole Recipe

Here are some additional add-ins or ingredient substitutions for this recipe.  If you don’t like the vegetables used in this recipe, you can easily switch out the vegetables for mushrooms, onions, sweet peppers, shallots or corn without changing the points. Also, if you are not a fan of tuna, you can add in premium chunk chicken breast without changing the points as well. Cook times for both remain the same. Lastly, I used extra wide whole wheat egg noodles in the recipe. If you cannot find whole wheat egg noodles at your store, I provided a link to whole wheat egg noodles from Amazon.
