Weight Watchers Instant Pot Tuna Noodle Casserole Recipe

Ingredients
  • Butter Flavored Cooking Spray
  • 2 Tablespoons Land O'Lakes Light Whipped Butter
  • 3 Large Carrots, Diced Small
  • 1 Teaspoon Each of Salt and Pepper
  • 2 Garlic Cloves, Minced
  • ¼ Cup of All Purpose Flour
  • 2 Cups Each of Fat Free Chicken Broth + Fat Free Half & Half
  • 8 oz of Whole Wheat Egg Noodles
  • 4 (5 oz Cans) of Solid White or Chunk Light Tuna in Water (Drained well)
  • 2 Tablespoons of Fresh Lemon Juice
  • 2 Cups of Frozen Peas
Instructions
  1. Select the saute setting on your Instant Pot and adjust the heat to high. Spray base with butter flavored cooking spray and add the whipped butter. When butter is melted, add the diced carrots along with the salt and pepper. Cook until carrots are tender - about 10 minutes.
  2. Add in garlic and continue cooking for 1 more minute. Stir in flour and blend well. Add broth in ½ cup at a time and whisk to combine with the flour mixture. Bring to a boil and keep stirring until it becomes thickened.
  3. Stir in half and half. Add in egg noodles. Lock the lid and close the vent. Select manual for the setting and adjust the pressure to high. Set time for 3 minutes. When finished, allow the pressure to release for about 4 minutes followed by quick release.
  4. In a bowl, combine the drained tuna and lemon juice. You can add in more salt and pepper. Select saute setting and adjust to low heat. Stir the tuna mixture and the peas into the noodle mixture. Cook until well heated.
  5. This makes 6 large servings at 7 Blue SmartPoints, 9 Green SmartPoints, 3 Purple SmartPoints per serving. Enjoy!
