One of my favorite recipes is Jambalaya. I love all the different flavors in one dish. But I always found cooking it to be very laborious.
So, this past Christmas I got an Instant Pot and the maiden recipe was Jambalaya. And can I just say how delicious it was. And now since cauliflower and broccoli rice has come on the scene, the whole recipe can easily made for very low points.

Weight Watchers Freestyle Recipe for Instant Pot Jambalaya
1 can of Rotel Fire Roasted Diced Tomatoes (10 oz)
14.5 oz Can of Fat Free Beef Broth
6 oz Can of Tomato Paste
2 Each Red Peppers + Celery Ribs, Diced Small
4 Garlic Cloves, Minced
1 Onion, Diced Small
2 Teaspoons Each Dried Parsley + Dried Basil
1.5 Teaspoons of Dried Oregano and Salt
1.2 Teaspoon of Cayenne Pepper
Few Shakes of Tabasco Sauce
1 lb Each of Boneless Skinless Chicken Breasts, Cubed Small +Â Large Peeled Shrimp
8 oz Smoked Turkey Sausage, Sliced
DIRECTIONS:
- Combine diced tomatoes, broth and paste into your Instant Pot. Stir in peppers, celery, garlic and onion. Add seasonings and Tabasco. Put in chicken and turkey sausage.
- Lock lid and close vent. Choose the manual setting and set pressure to high. Set time for 8 minutes. When 8 minutes is up, quick release pressure according to Instant Pot instructions.
- Next, choose the saute setting and adjust to high heat. Stir shrimp in and cook for 5 minutes or until shrimp are nice and pink.
- This makes 6 servings for 2 Freestyle Points. To keep this at 2 Points, serve over Cauliflower or Broccoli Rice. Enjoy!
