On Facebook, I’m a subscriber to a lot of Weight Watchers Groups. It seems with what’s been going around our world lately has been leaving a lot of us extremely uninspired. Even worse, a lot of people are even facing potential job loss or have already lost their jobs. Now is the time to stay focused and not go off plan or become discouraged. I know it’s easier said than done. But when we come out of all this madness, let’s emerge healthier than ever before.
With local stores not being able to stock the shelves as often as before, a lot of our go-to Weight Watchers favorites aren’t as readily available. My personal suggestion is this: Instead of giving up and going off plan and, especailly if you are having trouble finding your favorite Weight Watchers foods and recipe ingredients, switch to the Purple Plan if you aren’t on it already.Â
Why? Because if you aren’t inspired to follow your Weight Watchers plan, the Purple Plan gives you a broader ZeroPoint list with healthy “comfort” type foods that may be more easy to follow in this season of life.  In my personal opinion, there are more budget friendly foods on the Purple ZeroPoint list. Such as: pasta (whole grain), rice, potatoes, etc.

In other words, if you feel like you are going to give up completely, at least try to still eat healthier. If you didn’t know already, the Purple ZeroPoint list offers budget friendly foods like:

Greek or Plain Nonfat Plain Yogurt

So, I’m going to show you my From the Pantry Budget Friendly Weight Watchers Meal Plan – that will keep you on track and will help you stretch your dollar farther too. I am going to show the cost of each meal as well as the total cost of the fantastic meals of the day. Also, I will include SmartPoints for the Blue & Green Plans too.

Snacks and desserts can be: fruit, hard boiled eggs, cut vegetables with fat free yogurt dip (just add a mixture of your favorite herbs, spices, dry soup mixes to make a dip), etc. Cost per serving is calculated according to Walmart’s Food Prices.
Monday:
Breakfast:Â Omelette in a Mug (0B, 6G, 0P) (If you have leftover ham from Easter, you can use that in place of the Canadian Bacon or just omit it completely & using an onion instead of red and green peppers for onion) $1.00/Serving
Lunch:Â Can of Tuna in Water (0B, 2G, 0P) mixed with Mustard (0 Points) or 2 Tablespoons of Light Mayonnaise (3B, 3G, 3P) on Nature’s Own ButterBread (3B, 3G, 3P) $1.07/Serving
Dinner: 4 Ounces of Dry Whole Grain/Whole Wheat Pasta with 1/3 Cup of Tomato Puree (11B, 11G, 0P) (1 Serving) $.45/Serving
Total SmartPoints for Monday:
17 SmartPoints on the Blue Plan
25 SmartPoints on the Green Plan
6 SmartPoints on the Purple Plan

Tuesday:
Breakfast: 1 Packet of Plain Oatmeal (3B, 3G, 0P) $.21/Serving
Lunch: Black Bean and Corn Salad (0B, 7G, 0P): $1.00/Serving If you want to add canned tuna (in water) add a can for 0 SmartPoints on the Blue & Purple Plans. You can also add in white meat chicken (canned or cooked) for 0 SmartPoints too. Adding in the tuna or chicken is not reflected in the cost per serving.
Dinner: Easy Pantry Chicken Dinner (Recipe Below) $1.25/Serving (Serving does not include optional ingredients below)
Easy Pantry Chicken Dinner
2 Cups of Fat Free Chicken Broth
3/4 Cup of Wild or Brown Rice, Uncooked
15 Ounces of Corn (Canned), Drained
12 Ounces of Canned Chicken Breast, Drained
10 Ounce Can of Enchilada Sauce (Can Substitute with 1.5 Cups of Taco Sauce or Salsa)
1 Teaspoon of Chili Powder or whatever spices you have on hand
Fat Free Shredded Cheese, Optional
Can of Beans, Drained, Optional
Taco Shells or Tortillas, Optional

DIRECTIONS:
- In a skillet, add the chicken broth over medium heat. Add in chili powder (or whatever spices you are using). Reduce to a simmer. Add in rice. Reduce heat to low and cover.
- Cook rice for 15 minutes or until most of the broth is absorbed. Stir in corn, chicken and beans (if using). Add in Enchilada Sauce. Put lid back on and turn heat up to medium. Cook for 5 minutes.
- Stir mixture and serve dividing evenly among 4 bowls. Add 1/4 cup of Fat Free Cheese to each bowl, if using cheese. Â
- This makes 4 servings at 1SP on the Purple Plan, 2 SmartPoints on the Blue Plan and on the Green Plan, it is 6 SmartPoints per serving.
- You can serve this as is or in taco shells or tortillas.
