Here is the most amazing Weight Watchers slow cooker chicken recipe I have ever had. And it involves a can of coca cola! How crazy is that? In the past, I remade the Pioneer Woman’s Dr. Pepper Chicken recipe and it was good…..but this super amazing Weight Watchers Slow Cooker Cola Chicken recipe blows it out of the water. And I love being able to dump it into my slow cooker and walking away.
This is super kid friendly, freezer friendly and cost friendly since I see split chicken breast so much at my nearby supermarkets for $.99 cents a pound, I love it more. And with warmer weather around the corner, I can make this throughout the summertime too in the slow cooker.
Lastly, if split chicken breasts aren’t your favorite, feel free to substitute another cut of bone-in chicken like drumsticks, thighs, etc.

Amazing Weight Watchers Slow Cooker Cola Chicken Recipe
INGREDIENTS:
4 Split Chicken Breasts (about 3 Pounds)
Salt & Pepper to Taste
2 Onions (Yellow, White or Red), Peeled and Quartered
2 Lemons, Quartered
18 Ounce Bottle of G. Hughes Sugar Free Barbecue Sauce (Any Flavor)
12 Ounce Can of Coca Cola (NOT DIET)
Vegetable Cooking Spray
Fresh Parsley or Diced Green Onion, Optional
How To Make Weight Watchers Slow Cooker Cola Chicken:
- Spray your slow cooker with vegetable cooking spray.
- Rinse chicken and pat dry with paper towels. Season generously with salt and pepper to taste. Put chicken breasts in the slow cooker.
- Add in onions and lemons.
- Pour the G. Hughes Sugar Free Barbecue Sauce and Coca Cola over the top.
- Cover and cook on low for 6 to 8 hours or on high for 4 hours.
- Serve warm with some of cooking liquid on the side for dipping or spoon on top of chicken breast. I remove the skin on the breast and pour the sauce on top. Top with fresh parsley or green onion if using. The Weight Watchers Points below reflect chicken with skin removed.
- This serves 4 and each serving is 4 Weight Watchers Points. Enjoy!

What Weight Watchers Side Dishes to serve with Slow Cooker Cola Chicken:
I love to serve this with mashed cauliflower (as seen in the picture above) which is 0 WW Points. I simply mash a head of cauliflower after microwaving it until it’s soft and add in lots of herbs and seasonings. Lastly, I add a drip or two of fat free milk and I Can’t Believe It’s Not Butter Spray.

WEIGHT WATCHERS CAULIFLOWER AU GRATIN RECIPE
Butter Flavored Vegetable Cooking Spray
2 Garlic Cloves, Minced
1 Large Head of Cauliflower, Broked into Small Florets
1.5 Cups of Fat Free Half & Half
2 Tablespoons of All Purpose Flour
Salt/Pepper to Taste
Dash of Cayenne Pepper
1.5 Cups of Reduced Fat Grated Swiss Cheese
2 to 3 Tablespoons of Chopped Fresh Parsley
DIRECTIONS:
- In a large saute pan that has been sprayed with vegetable cooking spray, saute garlic for 2 minutes. Add cauliflower and saute until crisp tender. You can add some water to the skillet so it steams the cauliflower while browning it.
- Combine half and half and flour in a bowl. Stir well and add into skillet. Blend well. Add salt/pepper to taste. Add in cayenne pepper. Cook and stir until everything is thickened and bubbly.
- Spray a 2 quart baking dish well with vegetable cooking spray. Pour vegetable mixture from skillet into baking dish. Sprinkle with cheese and place under the broiler until browned (about 4 minutes)
- Sprinkle with parsley. Serve immediately.
- This serves 6 at 3 SmartPoints on the Blue, Green & Purple Plans per serving. Enjoy!

6 Cups of Grated (Riced) Cauliflower (Fresh)
3/4 Cup Each of Kraft Fat Free Shredded Cheddar & Mozzarella Cheese
1 oz Kraft Reduced Fat Grated Parmesan Cheese
1 Egg, Beaten
Teaspoon each of Dried Basil, Parsley & Salt
1/2 Teaspoon of Ground Pepper
Minced Garlic Clove
Slow Cooker 0 Point Italian Meat Gravy, for dipping, Optional (Recipe Below)
Weight Watchers Pizza Sauce for dipping, Optional (Recipe Below)
DIRECTIONS:
- Preheat oven to 425 degrees. Microwave cauliflower in a covered bowl about 8 minutes or until tender. When it’s cool, dump into a flour sack towel or cheesecloth and squeeze until the liquid comes out. Return it to the bowl when done.
- In a separate bowl, combine cheeses. Stir half of the cheese mixture into the bowl of cauliflower. Reserve the remaining cheese mixture. Add the egg, basil, parsley, garlic, salt and pepper and stir into the cauliflower.
- Line a baking sheet with parchment paper and shape the cauliflower mixture into a 11 x 9 rectangle. Bake until the edges are browned – about 20 minutes. Top with the remaining cheese and bake until cheese is melted and bubbly – about 10 more minutes. Cut into 8 big breadsticks and serve with the 0 SmartPoint Pizza Sauce or Italian Meat Gravy for dipping (if using). Each breadstick is 1 SmartPoint and you can have up to 3 breadsticks for 1 SmartPoint. Enjoy!

INGREDIENTS:
Large Head of Cauliflower, Broken into Florets
Bunch of Broccoli, Broken in Florets
1.5 Cups of Fat Free Sour Cream
2 1/4 Cups of Kraft Fat Free Cheddar Cheese (Shredded)
1/3 Cup of Kraft Reduced Fat Parmesan Cheese (Grated)
Salt/Pepper to Taste
Butter Flavored Cooking Spray
DIRECTIONS:
- In a large sauce pot add 2 cups of water. Add in cauliflower and broccoli florets. Add in a pinch of salt and bring to a boil. Reduce heat, cover and simmer for about 10-15 minutes. Drain.
- In a large bowl, add fat free sour cream, cheeses, salt/pepper to taste and stir to combine. Add in broccoli & cauliflower. Stir to coat well.
- Spray a 13 x 9 dish or large baking dish with Butter Flavored Cooking Spray. Spoon broccoli & cauilfower mixture into baking dish and place in a 350 degree preheated oven. Bake for 20-25 minutes or until heated through.
