Now that we are nearing the end of summer, somehow it gets easier to concentrate on weight loss. There aren’t as many get togethers, barbecues, summer cocktails etc. to contend with. Now you can really focus on goals before the holidays hit.
Like I said before, my issues in the past have always been with not being prepared or having the right, healthy foods at my disposal. I feel I have a handle on this now. That’s why I do these weekly menus. I need a base plan – plain and simple. I hope these menus help give you ideas on what to eat, what recipes to try and so on.
So let’s use these last few weeks of summer to reflect on what you need to succeed. Figure it out and hone in on it. Change your mind, get laser focused on your goals and you will get there. Not overnight, but soon. It’s waiting for you.

Listed below are the evening snacks I ate on Week 32. Every week, I try to make it a point to carry over 4 points daily in case later in the week, I am in a position where my food choices are limited.
Monday: 4 Oreo Thins (6 Points)

To this point, I still have not broken into my weekly points allowance at all. Each week, I am going to keep my nighttime snack category open to use up some of my points.

Week 33 – Weight Watchers Freestyle Diet Plan Menu
Week of 8/20/18
Monday
Breakfast:Â Â Â (3) Scrambled Eggs with (2) Slices of Borden Nonfat Sliced Cheese (1 Point), Onions & Mushrooms (0 Points)
Snack: Brach’s Sugar Free Gummy Bears (2 Points)
Lunch:   (2) Hebrew National 97% Fat Free Hot Dogs (1 Point), (2) Nature’s Own 100% Whole Wheat Hot Dog Buns (6 Points)
Snack: 1 Cup of Fat Free Cottage Cheese with Pineapple Chunks (3 Points)
Dinner: Oriental Chicken “Rice” Bowl (Recipe Follows) (2 Points)
Oriental Chicken “Rice” Bowl
1/4 Cup of Rice Vinegar
2 Tablespoons of Soy Sauce
1 Tablespoon each Sesame Oil & Nature’s Hollow Sugar Free Honey Substitute
1 Tablespoon of Sesame Seeds (Toasted)**
1/2 Teaspoon of Ground Ginger
2 Bags of Frozen Riced Cauliflower
1 Bag of ColeSlaw Mix
2 Cups of Shredded Cooked Boneless Chicken Breast
2 Cups of Frozen Shelled Edamame, Thawed
**I use this sesame seed toasting tool for toasting sesame seeds and nuts. It’s convenient and you can do it right on your stovetop without the need to put the oven on.
DIRECTIONS:
- Whisk the first 6 ingredients together. Cook rice in microwave and divide into 4 bowls.
- In a separate bowl, combine coleslaw mix, chicken, edamame and the dressing. Divide this mixture among the 4 bowls of cauliflower rice.
- This makes 4 servings at 2 Freestyle Points each. Enjoy!

Lunch: Avgolemono Soup (Recipe Follows), (2 cups = 2 Points)
Chicken Avgolemono Soup
32 oz Chicken Broth
1 Ounce of Dry Pastina
3 Tablespoons of Fresh Lemon Juice
Salt/Pepper to Taste
1/4 Teaspoon of Dried Oregano
1 Cup of Shredded Cooked Chicken Breast
3 Eggs, Beaten
Fresh Parsley (Garnish)
Fat Free Greek Plain Yogurt (Topping)
DIRECTIONS:
- Put chicken broth in a large saucepan and bring to a boil. Add pastina. Cook until softened to taste – about 5-7 minutes. Add salt/pepper to taste and oregano.
- In a separate bowl, add eggs and lemon juice and whisk until smooth.
- Take out 1/2 cup of hot broth and add that into egg bowl and stir together to blend. Dump this mixture into saucepan and continue to simmer until broth begins to thicken – about 2 minutes. Add in chicken and stir it into the broth until heated through. Garnish with fresh parsley and fat free Greek plain yogurt.
- This makes about 1 Quart of soup at 4 Freestyle Points for all of it. Per cup it is 1 Freestyle Point. Enjoy!
