If you love shrimp and spicy Mexican style food, you will love this recipe for Skinny Spicy Mexican Style Shrimp. For those of us counting our points on Weight Watchers Freestyle, this is only 1 Point per serving.
This quick cook healthy dinner recipe only takes about 20 minutes from start to finish and can easily be doubled for a party.
Serve this recipe with Spanish Cauliflower Rice (recipe coming) and shredded lettuce, tomatoes and fat free plain yogurt to keep the points per serving unchanged.

How to Make Skinny Spicy Mexican Style ShrimpÂ
1.5 Tablespoons of Land O’Lakes Light Whipped Butter
1/4 Cup of Heinz No Sugar Ketchup*
1 Tablespoon Each of Chili Garlic Sauce + Hot Sauce
1/2 Teaspoon Each of Chili Powder, Garlic Powder & Cumin
2 Pounds of Raw Peeled Large Shrimp
Vegetable Cooking Spray
Sliced Limes, Optional
DIRECTIONS:
- Preheat oven to 350 degrees. In a microwave safe bowl, combine all ingredients except the shrimp + limes (if using). Cover and microwave for 1 minute until all flavors are combined and butter is melted. Stir until blended.
- Spray a 13 x 9 baking dish with vegetable cooking spray. Add shrimp and pour the microwaved mixture over shrimp and toss to combine.
- Bake uncovered for about 15 minutes or until shrimp have turned pink. Stir halfway through baking time.
- This makes 4 servings at 1 Freestyle Point per serving. Serve with sliced limes, if using. Enjoy!
