First on the list is the Pioneer Woman’s Eggs Benedict. Yes, Eggs Benedict are indulgent and delicious – I mean the Hollandaise Sauce itself makes anything delicious. But at a whopping 22 Points for 1 Serving (1 Egg, 1 slice of Canadian Bacon and a 1/2 of an English Muffin) is a SERIOUS theft of my precious daily points allotment. And I want more than a 1/2 of an English Muffin, right? Let’s lightened this up now!
Freestylin’ Eggs Benedict
1 Tablespoon of Land O Lakes Whipped Butter
1 Tablespoon of Cornstarch
3/4 Cup of Nonfat Buttermilk
1/2 Teaspoon Each of Salt and White Pepper
1/4 Teaspoon of Cayenne Pepper
1 Egg, Beaten
1 Tablespoon of Lemon Juice
4 Eggs
4 Slices of Canadian Bacon
2 Whole Wheat or Light English Muffins
I Can’t Believe It’s Not Butter Spray
Vegetable Cooking Spray
Dash of Paprika
DIRECTIONS:
- In a saucepan melt butter over low heat. When butter is completely melted, pour into a small bowl and set aside.
- Whisk 1/4 cup of the Buttermilk, cornstarch, salt, white and cayenne pepper in a saucepan until it is completely blended together. Add in beaten egg and the rest of the Buttermilk. Continue cooking over medium heat while whisking until it just begins to simmer. Whisk for another 30 seconds and turn off heat and stir in the lemon juice and the melted butter. Whisk once more and set aside to keep warm while preparing the eggs.
- Cook eggs (Poached or Sunnyside Up) along with the Canadian Bacon in a pan that has been sprayed liberally with Vegetable Cooking Spray (for Sunnyside Up).
- Toast the English Muffins and spray with I Can’t Believe It’s Not Butter Spray. Put 1 slice of Canadian Bacon on each English Muffin half and top each muffin half with an egg. Drizzle 2-3 Tablespoons of Hollandaise Sauce over each English Muffin. This serves 2 people (each serving is 2 English Muffin Halves) for 5 Freestyle Points. Enjoy!

What a savings on points! From 22 Points for 1 English Muffin half to just 5 Freestyle Points for 2 Muffin halves. I’ll take it!
The Pioneer Woman’s has a recipe for Thai Chicken Pizza in her Food From My Frontier Cookbook. At 8 Servings (1 Slice of Pizza), the points will be 17 per slice. Ouch! I have never been known to eat 1 slice of Pizza so this recipe as it is, as good as it sounds, is off my list. I am going to redo this so we can eat more and have some points to use for other meals.
Freestylin’ Thai Chicken Pizza
1 Recipe 2Â Ingredient Dough
2 Minced Garlic Cloves
1/2 Teaspoon of Dried Ginger
1/4 Cup of Soy Sauce
2 Teaspoons of Sesame Oil
1/2 Teaspoon of Fish Sauce
10 Tablespoons of Peter Pan 1/3 Less Sugar Peanut Butter
1/4 Cup of Warm Water
3 Tablespoons of Thai Sweet Chili Sauce
2 Cooked Boneless Skinless Chicken Breasts, Sliced into Strips
Salt/Pepper to Taste
Vegetable Cooking Spray
10 Ounces of Kraft Fat Free Shredded Mozzarella Cheese
1.5 Cups Each of Shredded Carrots & Fresh Cilantro Leaves
1/3 Cup of Chopped Peanuts
DIRECTIONS:
- Make the 2 Ingredient Dough according to directions found here. Once combined, on a large baking sheet that has been sprayed with Vegetable Cooking Spray, roll out the dough as you would a pizza crust. Using a fork, prick the dough lightly so it doesn’t puff up in the oven.
- Preheat oven to 425 degrees and bake pizza dough for 5 minutes. Take out of oven while arranging the toppings.
- In a food processor or blender, add garlic, ginger, soy sauce, sesame oil, fish sauce, chili sauce, peanut butter and warm water. Blend together. You can add salt/pepper to taste as well.
- Take a couple tablespoons of the mixture and spread it over the pizza crust. Sprinkle on the fat free mozzarella cheese and then the chicken strips.
- Bake for about 12-15 minutes and then add the carrots and cilantro leaves. Now drizzle the remaining sauce all over the pizza and sprinkle with the peanuts.
- This makes 8 servings at 7 Freestyle Points per slice. Enjoy! Now you can enjoy 2 slices for less points than the original version of the recipe.

Freestylin’ Whiskey Mustard Meatballs
Next up is the Pioneer Woman’s Whiskey Mustard Meatballs – YUM! The recipe for these meatballs are in the book I referenced above.
2 Pounds of Ground Turkey Breast
1/4 Cup of Whole Wheat Panko Bread Crumbs
1 Teaspoon of Kitchen Bouquet
Egg Yolk (1)
1 Teaspoon of Dried Parsley
Salt/Pepper to Taste
1/2 Cup of Spicy Mustard (divided)
1/2 Cup of Whiskey
2.5 Cups of Fat Free Beef Broth
3 Tablespoons of Worcestershire Sauce
3/4 Cup of Fat Free Half & Half
DIRECTIONS:
- In a large bowl, combine the first 6 ingredients and 1/4 cup of the mustard and mix thoroughly.
- Form into about 16 meatballs. Put into a baking pan lined with parchment paper. Bake in a 375 degree oven for about 30 minutes. Using a large spoon, turn your meatballs over halfway through cooking.
- Meanwhile in a large saucepan, combine the whiskey and beef broth. Allow it to bubble up and reduce for about 5 minutes or until it gets thicker. Stir in the rest of the mustard and Worcestershire Sauce. Blend together and cook for a few minutes.
- Add the Fat Free Half & Half into saucepan and blend together. Cook for 1 minute and add the meatballs.
- This makes 5 servings with 4 Meatballs per serving. Each serving (4 Meatballs per serving) is 4 SP on the Blue and Purple Plans. Per serving on the Green Plan, it is 6 SP per serving. Each serving includes about 2/3 Cup of Whiskey Sauce. Serve over cauliflower or broccoli rice for no additional points.
