Freestylin' Thai Chicken Pizza

Ingredients
  • 1 Recipe 2 Ingredient Dough
  • 2 Minced Garlic Cloves
  • ½ Teaspoon Dried Ginger
  • ¼ Cup Soy Sauce
  • ½ Teaspoon Fish Sauce
  • 2 Teaspoons Sesame Oil
  • 10 Tablespoons Peter Pan ⅓ Less Sugar Peanut Butter
  • ¼ Cup Warm Water
  • 3 Tablespoons Thai Sweet Chili Sauce
  • 2 Cooked Boneless Skinless Chicken Breasts, Sliced into Strips
  • Salt/Pepper to Taste
  • Vegetable Cooking Spray
  • 10 Ounces Kraft Fat Free Shredded Mozzarella Cheese
  • 1.5 Cups Each Shredded Carrots & Fresh Cilantro Leaves
  • ⅓ Cup of Chopped Peanuts
Instructions
  1. Make the 2 Ingredient Dough. On a large baking sheet that has been sprayed with Cooking Spray, roll out the dough. Using a fork, prick the dough lightly so it doesn't puff up in the oven.
  2. Preheat oven to 425 degrees and bake pizza dough for 5 minutes. Take out of oven while arranging the toppings.
  3. In a food processor or blender, add garlic, ginger, soy sauce, sesame oil, fish sauce, chili sauce, peanut butter and warm water. Blend together. You can add salt/pepper to taste as well.
  4. Take a couple tablespoons of the mixture and spread it over pizza crust. Sprinkle on the fat free mozzarella cheese and then the chicken strips.
  5. Bake for about 12-15 minutes. Remove from oven & add carrots and cilantro leaves. Drizzle the remaining sauce over the pizza. Sprinkle with the peanuts.
  6. This makes 8 servings at 7 Freestyle Points per slice. Enjoy! Now you can enjoy 2 slices for less points than the original version of the recipe.
