Have your stores put a limit on how many loaves of bread you can buy? Our stores have. Since I always have flour on hand, and my favorite Goodwill bread machine, the only thing I usually need is yeast. But it seems yeast is hard to come by as well.  I had to get creative and find a Weight Watchers friendly batter bread recipe that doesn’t use yeast, tastes delicious and we can use as sandwich bread. To make it even easier – no bread machine, mixer or kneading is required! Enter my Healthy, Easy, No Knead, Yeast Free White Bread recipe. It is super easy to make and you can easily double the recipe.

Healthy Easy No Knead Yeast Free White Bread Recipe | No Bread Machine or Mixer Required Bread Recipe
1 Large Egg + 1 Egg Yolk
1.5 Tablespoons of Vegetable/Canola Oil
3/4 Cup of Water
2 Cups of Self Rising Flour
1/4 Teaspoon Each of Baking Powder & Salt
DIRECTIONS:
- Preheat oven to 375 degrees. Add egg, egg yolk and oil together in bowl. Whisk together. Add in water. Whisk again. Stir in flour, baking powder and salt. Mix well. Batter will be sticky.
- Spray a loaf or round glass pan with vegetable cooking spray. Spoon bread batter into pan. Bake for 35-45 minutes. Start checking bread after 35 minutes. I insert a butter knife into the middle of the bread (or a skewer) and if it comes out clean, the bread is done.
- Let it cool on a wire rack. After 30 minutes. remove bread from pan and slice. I get about 6 slices (maybe 7/8 slices if I use my round glass casserole dish) – enough for 3 sandwiches.
- At 1 slice per serving, it is 5SP on the Blue, Green & Purple Plans.
