Why This Shrimp Pierogi Casserole Works
This shrimp pierogi casserole works because it balances creamy comfort with lighter seafood flavor. The pierogies create a soft, satisfying base while the shrimp adds protein without heaviness. Instead of relying on sausage or ground beef like many traditional pierogi casseroles, this version keeps things meatless but still hearty enough to serve as a full dinner.
The garlic, herbs, and lightened cream sauce bake into the pierogies so every bite feels rich without being overly heavy. It’s the kind of easy weeknight dinner that tastes indulgent but still fits into a healthy comfort food routine.
Ingredient Notes for a Healthier Shrimp Casserole
Using the right ingredients makes this shrimp pierogi casserole lighter without losing that creamy comfort food texture.
Pierogies:
Frozen potato and cheese pierogies work best here. They hold their shape while baking and absorb the garlic cream sauce beautifully. There’s no need to pre-boil — they cook perfectly right in the oven.
Shrimp:
Use raw, peeled, and deveined shrimp. Medium or large shrimp work best so they stay juicy and don’t overcook. If using frozen shrimp, thaw completely and pat dry before adding to the casserole.
Cream Sauce:
Instead of a heavy Alfredo-style base, this recipe uses a lighter garlic cream mixture that still creates richness but keeps the dish from feeling overly heavy.
Cheese & Herbs:
A small amount of parmesan adds saltiness and depth. Fresh parsley or a squeeze of lemon at the end brightens everything and keeps the seafood flavor balanced.
How to Make Healthy Shrimp Pierogi Casserole
This shrimp pierogi casserole comes together quickly and bakes in one dish, making it perfect for an easy weeknight dinner.
Step 1: Prep the Shrimp
Pat the shrimp dry and season lightly with salt, pepper, and a touch of garlic. If using frozen shrimp, make sure they are fully thawed and drained so the casserole doesn’t become watery.
Step 2: Make the Garlic Cream Sauce
In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Stir in a light cream mixture and a small amount of parmesan. Simmer just until slightly thickened.
Step 3: Assemble the Casserole
Arrange the frozen pierogies in a greased 9×13 baking dish. Scatter the shrimp evenly over the top. Pour the garlic cream sauce over everything, making sure the pierogies are coated.
Step 4: Bake Until Bubbly
Bake at 375°F until the shrimp are cooked through and the sauce is bubbling around the edges. The pierogies will become tender and absorb the flavor as they bake.
Step 5: Finish and Serve
Sprinkle with fresh parsley and a squeeze of lemon before serving. Let rest for a few minutes so the sauce thickens slightly before scooping.

Make Ahead, Storage, and Reheating Tips
This shrimp pierogi casserole can be partially prepped ahead of time, which makes it even more weeknight-friendly.
Make Ahead
You can assemble the pierogies and sauce in the baking dish up to 24 hours in advance. Store covered in the refrigerator. Add the shrimp just before baking so they stay tender and don’t release excess moisture.
Storing Leftovers
Store leftovers in an airtight container in the refrigerator for up to 3 days. Because this is a seafood-based casserole, it’s best enjoyed fresh rather than frozen.
Reheating
Reheat individual portions in the microwave until warmed through, or reheat the full dish in the oven at 325°F until hot. If the sauce thickens too much, add a small splash of milk before reheating.
Frequently Asked Questions
Can I use pre-cooked shrimp in this casserole?
Yes, but reduce the bake time slightly. Since pre-cooked shrimp are already done, you only need to heat them through. Overbaking can make them rubbery.
Do I have to boil the pierogies first?
No. Frozen pierogies bake perfectly in the oven and absorb the garlic cream sauce as they cook, which adds extra flavor.
Can I make this recipe fully vegetarian?
Yes. Simply omit the shrimp and use vegetable broth. You can add sautéed mushrooms or spinach for extra texture and flavor.
Can I freeze shrimp pierogi casserole?
Freezing is not recommended once baked because seafood can change texture after thawing. It’s best enjoyed fresh or refrigerated for up to 3 days.
What should I serve with shrimp pierogi casserole?
A simple green salad, roasted asparagus, or steamed broccoli pairs well and keeps the meal balanced.
Is this good for Lent or meatless Fridays?
Yes. Since this recipe contains seafood and no red meat, it works well as a hearty meatless dinner option during Lent. If following for Lent, replace chicken broth with vegetable broth.
