A-MAIZE-INGLY Delicious Recipes Using Corn on Weight Watchers Freestyle

When corn became a 0 Point food on Weight Watchers Freestyle, I was e-l-a-t-e-d. I love corn any way I can get it. In soup, salads, fritters, pudding, you name it. So, I thought I’d share some great ways of using corn in recipes. Don’t get me wrong – I love corn on the cob and corn as a side dish. But why stop there, especially with Thanksgiving coming up, if you want some new corn inspiration, below are some amazingly delicious recipes using corn on Weight Watchers Freestyle.

Parmesan & Ham Corn Fritters With Yogurt Dipping Sauce

3 Cups of Frozen Sweet Corn, Defrosted OR Leftover Corn Kernels

3 Eggs (Large & Separated)

1/2 Cup Each Grated Reduced Fat Parmesan Cheese + Lean Ham (Cubed & Diced Small)

1/4 Cup of All Purpose Flour

Salt/Pepper to Taste

2 Tablespoons of Whipped Butter (Land O’ Lakes)

Butter Flavored Cooking Spray

Parmesan & Ham Corn Fritters

DIRECTIONS:

  1. Separate eggs and put egg whites and yolks into 2 separate bowls. Whisk yolks well. Whisk egg whites until stiff.
  2. In another bowl, combine corn, parmesan cheese, ham, flour, salt and pepper to yolks.
  3. Stir to combine. Add in egg whites.
  4. Spray a large skillet generously with butter flavored cooking spray. Heat over high heat. When pan is hot, reduce heat to medium and add in whipped butter.
  5. When butter is melted, using a medium cookie dough scoop, drop corn batter mixture into skillet. Slightly flatten batter out. Cook about 3 minutes on each side over medium heat. Remove to a plate and cover it to keep warm.
  6. This makes about 12 nice sized fritters. At 2 Parmesan Corn Fritters per serving, it is 3 Freestyle Points. Enjoy! One corn fritter is 2 Points.

Who doesn't love corn fritters? These delicious Parmesan Ham Corn Fritters with Yogurt Dipping Sauce is easy to make, uses leftover ham and is a delicious side dish for just 3 Freestyle Points/2 Corn Fritters per serving. 1 Corn Fritter is 2 Freestyle Points.
Ingredients

Roasted Red Pepper Yogurt Dipping Sauce

1 Cup of Greek Plain Greek Yogurt

1-2 Minced Garlic Cloves

Sea Salt & Ground Black Pepper to Taste

1.5 Teaspoons of Roasted Red Pepper Chili Paste

Tablespoon of Lime Juice (or more according to taste)

Teaspoon of Dried Parsley or Cayenne Pepper (Optional)

Roasted Red Pepper Yogurt Dipping Sauce

DIRECTIONS:

  1. Mix all ingredients together and put into refrigerator to chill for 2 hours. Serve with Parmesan & Ham Corn Fritters.
  2. The entire bowl of Roasted Red Pepper Yogurt Dipping Sauce is 3 Freestyle Points. Enjoy!

2 Teaspoons of Extra Virgin Olive Oil

Butter Flavored Cooking Spray

1/2 Cup Diced Onion

1 Each Small Diced Red & Green Pepper

2 Tablespoons of Whipped Butter (Land O’Lakes)

4 Cups of Sweet Corn (If using frozen corn, defrost beforehand)

Salt/Pepper to Taste

2 Tablespoons of Fresh Parsley, Minced

Confetti Corn

DIRECTIONS:

  1. Spray a large saute pan generously with butter flavor cooking spray and place over high heat. When pan is hot, add 2 teaspoons of extra virgin olive oil.
  2. Add diced onion and peppers. Saute about 5 minutes or until vegetables are soft. Season with salt/pepper to taste.
  3. Add whipped butter and when melted, add corn. Season again with salt/pepper.
  4. Saute corn about 7-10 minutes along with the onion and peppers.
  5. Stir in fresh parsley when ready to serve.
  6. This makes 6 servings at 1 Freestyle Point per serving. Enjoy!

4 Cups of Sweet Corn (can use frozen)

1 Jalapeno Pepper, Seeded and Diced Small

1 Onion, Diced

Teaspoon of Chili Powder

4 Cups of Fat Free Chicken Broth + 2 Cups of Water

10 oz Can of Diced Tomatoes with Green Chilies

1 Can of Black Beans (Drained & Rinsed) (15 oz Can)

4 Cups of Shredded Chicken or Turkey

Salt/Pepper to Taste

Vegetable Cooking Spray

Tex Mex Chicken Corn Stew

DIRECTIONS:

  1. Spray a saute pan generously with vegetable cooking spray over medium high heat. When pan is hot, add in the jalapeno and onion. Saute for about 5 minutes, then add in the corn. Saute for about 7 minutes over medium heat. Season with salt/pepper to taste and the chili powder.
  2. In a large sauce pan, add chicken broth, water, diced tomatoes and rinsed black beans. Season with salt/pepper to taste. Add in chicken or turkey and vegetables from the saute pan.
  3. Reduce heat to low and simmer covered (with lid ajar) for 10 minutes until flavors combine and stew is heated through.
  4. This makes 4 nice sized bowls of stew and is 0 Freestyle Points for the entire recipe. Enjoy!

Repeat after me: I will never throw out leftover corn again!

These recipes are so delicious and can easily be made ahead of time and reheated. The stew is freezer friendly so double it and have extra on hand. At 0 Points for the entire recipe, keep it on hand for a quick dinner when time is short.
