4 Cups of Sweet Corn (If using frozen corn, defrost beforehand)
Salt/Pepper to Taste
2 Tablespoons of Fresh Parsley, Minced
Instructions
Spray a large saute pan generously with butter flavor cooking spray and place over high heat. When pan is hot, add 2 teaspoons of extra virgin olive oil.
Add diced onion and peppers. Saute about 5 minutes or until vegetables are soft. Season with salt/pepper to taste.
Add whipped butter and when melted, add corn. Season again with salt/pepper.
Saute corn about 7-10 minutes along with the onion and peppers.
Stir in fresh parsley when ready to serve.
This makes 6 servings at 1 Freestyle Point per serving. Enjoy!
