Weight Watchers Watermelon Gazpacho Recipe + The Perfect Chilled Summer Soup
INGREDIENTS:
4 Large Roma Tomatoes
1/2 Serrano Chile or Jalapeno Pepper
3 – 4 Cups of Cubed Seedless Ripe Watermelon
1.5 Teaspoons of Red Wine Vinegar
2 Tablespoons of Extra Virgin Olive Oil
1/2 Cup of Red Onion, Minced
1 Cucumber, Peeled, Seeded & Cubed Small
Salt/Pepper to Taste
Lime Wedges, Optional
Mint Leaves or Fresh Herbs, Optional
DIRECTIONS:
- In a blender, combine the tomatoes and the chile/jalapeno. Puree together. Using a strainer, pour the tomato mixture into another bowl to get rid of the seeds. Discard seeds. Return tomato puree to blender. Add watermelon and puree. Pour in the vinegar and oil. Pulse.
- Add the onion and cucumber. Season with salt and pepper. Puree until smooth.
- Refrigerate in the blender pitcher until serving.
- This makes 4 servings. When ready to serve, garnish with Mint Leaves/Fresh Herbs/Lime wedge if using. To make it pretty, garnish with additional chopped red onion, cucumber, peppers or more watermelon. On the WW Personal Points Plan, each serving is 2 PP, however you earn 1 PP back for all eating all the vegetables/fruits in this amazing cold soup. So it’s basically 1 PP for a HUGE bowl.
