Healthy Bird’s Nest Breakfast Cups + Weight Watchers Friendly on the go recipe
INGREDIENTS:
30 oz bag of Frozen Hash Brown Potatoes
1 Teaspoon each of Salt + Pepper or to taste
1.5 Tablespoons of Olive Oil
1 1/4 Cups of Kraft Fat Free Cheddar Cheese, Shredded (Divided)
Dozen Eggs
9 Slices of Canadian Bacon, Sliced Small (I use Jones)
1/4 Cup of Fat Free Half & Half
Vegetable Cooking Spray
Fresh Herbs, Optional

DIRECTIONS:
- Preheat oven to 425 degrees. Using vegetable cooking spray, grease the cups of (2) 12-cup muffin baking pans.
- In a large mixing bowl, combine hash brown potatoes, salt, pepper, olive oil and 2/3 cup of fat free cheddar cheese. Mix well to combine everything.
- Divide the egg mixture among all 24 muffin cups evenly. Using your fingers, press the potatoes into a nest shape inside the muffin cups. Bake for 15-20 minutes or until the hash brown potatoes are browned. Remove from oven. Reduce oven temperature to 350 degrees.
- In another bowl, whisk the dozen of eggs and fat free half & half. You can add more salt and pepper or seasonings of your choice.
- Pour egg mixture into each muffin cup over the hash brown nests. Now evenly divide the sliced Canadian Bacon and the remaining shredded fat free cheese among the muffin cups. Add fresh herbs on top, if using.
- Bake in the oven for 13-15 minutes or until the eggs are set. Let cool in the muffin pan for a few minutes, then remove by sliding a butter knife around the edge of the potatoes.
- This makes 24 Healthy Breakfast Bird’s Nests. Each serving is 2 Nests. On the WW Personal Points Plan, each serving ranges from 1-5 PP depending on your choice of 0 Point Foods. On the Weight Watchers Blue Plan, 2 Nests are 3 SmartPoints. If you use the Weight Watchers Green Plan, they are 5 SmartPoints for 2 Nests. On Weight Watchers Purple Plan, they are only 1 SmartPoint for 2 Nests. Enjoy!

If you do make these Bird’s Nest Breakfast cups during a meal prep session, when they are completely cooled, store them in a storage bag. To reheat, simply reheat in the microwave for 30 seconds.
