What ingredients do I need to make these Healthy Iced Oatmeal Cookies?

Iced Oatmeal Cookies Recipe | Healthy Snacks | Healthy Eating | Crumbl Cookie Copycat
Ingredients
- 1 Cup Old Fashioned Oats
- 1 Cup Whole Wheat Flour
- 1/2 Tsp Baking Soda
- 1/2 Tsp Cinnamon
- 1/4 Tsp Salt
- 1/4 Cup I Can't Believe It's Not Butter Light Spread
- 1/4 Cup Sugar Free Maple Syrup
- 1 Large Egg
- 1 Tsp Vanilla Extract
- 1/2 Cup Unsweetened Applesauce
For the Icing:
- 1/2 Cup Powdered Allulose Sugar Substitute
- 1-2 Tbl Unsweetened Almond Milk
- 1/2 Tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the oats, whole wheat flour, baking soda, cinnamon, and salt. Mix well.
- In another bowl, whisk together the I Can't Believe It's Not Butter Light Spread, sugar free maple syrup, egg, and vanilla extract until well combined. Add the applesauce and mix again.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart. Use the back of a spoon to slightly flatten each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar substitute, almond milk, and vanilla extract until smooth. Adjust the consistency by adding more almond milk if needed.
- Once the cookies are completely cooled, drizzle the icing over the top of each cookie using a spoon or a piping bag.
- Allow the icing to set before serving.
- This makes 24 cookies. 2 Iced Oatmeal Cookies are only 2 WW Points on Weight Watchers. Enjoy!
