Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine the oats, whole wheat flour, baking soda, cinnamon, and salt. Mix well.
In another bowl, whisk together the I Can't Believe It's Not Butter Light Spread, sugar free maple syrup, egg, and vanilla extract until well combined. Add the applesauce and mix again.
Add the wet ingredients to the dry ingredients and stir until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart. Use the back of a spoon to slightly flatten each cookie.
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
In a small bowl, whisk together the powdered sugar substitute, almond milk, and vanilla extract until smooth. Adjust the consistency by adding more almond milk if needed.
Once the cookies are completely cooled, drizzle the icing over the top of each cookie using a spoon or a piping bag.
Allow the icing to set before serving.
