Believe me you are going to want to have these on hand to make. So make a few batches at once, roll into a log shape and freeze. When you are ready to cook them, simply slice and cook according to the instructions I have below – just add a few more minutes to the baking time.Â

How to Make Weight Watchers Air Fryer Lemon Slice Sugar Cookies
1/2 Cup Unsalted Butter, Softened
1 oz Package of Jell-O Sugar Free Lemon Pudding and Pie Filling
1/2 Cup of Swerve Sugar Substitute*
Large Egg
2 Tablespoons of 1% Milk
1 1/2 Cups of All Purpose Flour
1 Teaspoon of Baking Powder
Pinch of Salt
ICING:
2/3 Cup of Swerve Confectioner’s Sugar Substitute*
2 to 4 Teaspoons of Lemon Juice
- In a large mixing bowl, cream the butter, pie filling and sugar substitute until fluffy. Beat in egg and milk.Â
- In a separate bowl, whisk the flour, baking powder and salt. Gradually beat into the butter mixture.
- Separate the dough into 2 equal pieces. Flour your countertop and shape each into a 6″ long roll. Wrap and refrigerate for 3 hours until firm.
- Preheat air fryer to 325 degrees.Â
- Unwrap the chilled dough and cut crosswise into 12-1/2″ slices. Put slices in a single layer into the foil lined air fryer basket. Cook until edges are brown (like a Nilla Wafer cookie) – about 10 minutes. Let cool in basket for 2 minutes. Cool on a wire rack and repeat with remaining log.
- In a bowl, add Swerve Confectioner’s Sugar and lemon juice together. Drizzle over cookies. Let them stand until icing hardens a bit.
- This makes 24 cookies. Each cookie is 3 Freestyle Points, 2 Cookies are 5 Freestyle Points and worth every bite. Enjoy!
