Not only did we get a boat load of zucchini in our garden this year, eggplant is running a close second. So today, I thought I would share one of my all time greatest eggplant recipes that I’ve been enjoying so far this summer with you – a delicious easy Weight Watchers Spicy Grilled Eggplant recipe.

Spicy Grilled Eggplant Recipe
This Spicy Grilled Eggplant recipe is perfect as a side dish with grilled meat or pasta and is tasty enough to stand on its own as a spicy vegetable burger on these 1 SmartPoint SmartBuns.
INGREDIENTS:
2 Medium Eggplants, Cut into 1/2 slices
2 Teaspoons of Salt
Olive Oil Cooking Spray
3 Tablespoons of Lime Juice
4 Teaspoons of Slap Ya Mama Louisiana Cajun Seasoning
DIRECTIONS:
- Slice eggplant into 1/2″ slices. Arrange slices on a parchment paper lined cookie sheet and salt all the slices. Let them rest for 15 minutes so the bitterness and moisture can be drawn out. Wipe the slices with a paper towel to remove the excess salt/moisture.
- If using an outdoor grill, preheat your grill to medium heat.
- Spray each side of the eggplant slices with Olive Oil Cooking Spray. Drizzle the eggplant slices with the lime juice. Sprinkle with the Cajun Seasoning. Let them sit for 5 minutes.
- Grill the eggplant for 6 minutes on each side until it’s golden and has nice grill marks. Remove from grill and keep warm.
- If using a grill pan spray liberally with the Olive Oil Cooking Spray and let the pan get hot over medium heat. Add eggplant and grill about 6 minutes on each side or until tender.
