Delicious Chicken Madeira – Chicken Marsala’s tasty cousin. If you love Chicken Madeira and have never made it at home, it’s super easy. And guess what, you don’t need to go and buy a bottle of Madeira Wine either. Not for this Weight Watchers Skinny Chicken Madeira recipe.
I hate when a recipe calls for a small amount of an ingredient that is vital to the dish and you never use it again. In my recipe, you can simply use beef broth in place of the Madeira Wine. Same flavor but no extra points added to the recipe.

 Chicken Madeira
4 Boneless Skinless Chicken Breasts, Pounded to 1/4″ thick
1 1/4 Cups of Walden Farms Balsamic Vinaigrette*
4 Tablespoons of Swerve Brown Sugar Substitute*
Butter Flavored Vegetable Cooking Spray
1.5 Tablespoons of Extra Virgin Olive Oil
2 Cups of Fat Free Chicken Broth
1.5 Cups of Sliced White Mushrooms
1/2 Teaspoon of Salt & Pepper
2 Tablespoons of Chopped Fresh Parsley
2 Chopped Scallions, Optional
DIRECTIONS:
- Combine 1 cup of the balsamic vinaigrette and 2 tablespoons of Swerve in a plastic bag. Close and shake to combine well. Add in chicken breasts and marinate in the refrigerator for 30 minutes.
- Preheat oven to 350 degrees.
- Spray a large skillet with butter flavored cooking spray and place over medium high heat. When pan is hot, add oil. Remove chicken breasts from bag and saute on each side for about 5 minutes. When chicken is browned on both sides, remove from pan and place in an oven safe dish and bake for 15 minutes.
- While chicken is baking, add mushrooms to the saute pan and season with salt and pepper. Cook and stir for about 2 minutes. Add in the remaining balsamic vinaigrette, 2 tablespoons of Swerve brown sugar substitute and broth. Bring to a boil. Reduce heat and simmer for 25 minutes or until the sauce is reduced by half.
- Remove chicken from the oven and pour the sauce over the chicken breasts. Top with chopped fresh parsley and chopped scallions, if using.
- This makes 4 servings at 2 Points per serving. Enjoy!
