If you’re busy working from home or just need a healthy Weight Watchers quick meal, try this Weight Watchers Quick Creamy Noodle Casserole. It is easy to make with leftover ham or chicken, egg noodles and a few more ingredients. You can even throw in a bag of frozen broccoli to stretch it even further for no additional points. Most importantly, it’s kid friendly too.
This is the perfect recipe to use up all that leftover ham you might have stashed in the freezer. Also, this a perfect freezable/make ahead Weight Watchers meal too.

Weight Watchers Quick Creamy Noodle Casserole
1 Package of Whole Wheat Noodles (12 oz) or Barilla Whole Grain Rotini Pasta (16 oz)
3 Cups of Cubed Fully Cooked Ham (Bring to Room Temperature)
1 1/4 Cups EACH of Kraft Fat Free Shredded Mozzarella & Kraft Fat Free Shredded Cheddar Cheese
1/3 Cup Shredded Parmesan Cheese
1/4 Cup of Land O’Lakes Light Whipped Butter
1/2 Cup of Fat Free Half & Half
1/4 Teaspoon Each of Garlic Powder, Salt & Pepper, Dried Parsley
Optional: 1 Package of Frozen Broccoli or Cauliflower (16 oz)
DIRECTIONS:
- In a large stockpot or Dutch oven, cook the egg noodles or whole grain pasta in boiling water until tender. If you are using a bag of frozen vegetables, add them into the boiling water along with the noodles/pasta. Drain.
- Return to pan and stir in all the remaining ingredients. Cook and stir over low heat until butter is melted and mixture is heated through.
- This makes 6 servings. Per serving on the WW Personal Points Program it is:5 Personal Points per serving if you chose Whole Wheat Pasta as a Zero Point Food, and 11 Personal Points per serving if you DID NOT choose Whole Wheat Pasta as a Zero Point Food. On the older WW Program, per serving it is 11 SP on the Blue & Green Plans. On the Purple Plan, it’s 6 SP per serving.
- To freeze: Place into freezer containers. To use, partially thaw in the refrigerator overnight. Microwave, covered, on high until heated through, stirring gently. Add a little bit of fat free chicken broth, if necessary for 0 extra SmartPoints.
