Ingredients You Will Need
- Boneless chicken breasts, cubed
- Frozen cauliflower rice
- Frozen chopped broccoli
- Chicken broth
- Campbell’s Healthy Request Cream of Chicken Soup
- Plain Fat Free Greek Yogurt
- Onion, chopped small
- Small can of mushrooms, drained
- Garlic cloves, minced
- Dried parsley
- Salt & pepper to taste
- Kraft Fat Free Shredded cheddar cheese
Instructions:
Spray your slow cooker with nonstick cooking spray.
In a bowl, mix together the cream of chicken soup, garlic, chicken broth, and Greek yogurt until well combined.
Pour the mixture into the slow cooker and set it on low.
Add the cubed chicken, onion, chopped broccoli, and seasonings.
In the last 45 minutes of cooking, stir in the cauliflower rice and mushrooms. Cover and let it finish cooking.
For best results, keep the cauliflower rice in the refrigerator instead of the freezer before adding it to the slow cooker. Breaking up the rice before adding it will help it cook evenly.
Once fully cooked, serve in bowls and top each portion with ¼ cup of shredded cheddar cheese.

Ingredients
- 2 lbs Boneless Skinless Chicken Breast, Cubed
- 2 Bags Frozen Cauliflower Rice (10 oz Bags)
- 2 Bags Frozen Chopped Broccoli (12 oz Bags)
- 1/2 Cup Fat Free Chicken Broth
- 1 Can Campbell's Healthy Request Cream of Chicken Soup
- 1/2 Cup Plain Fat Free Greek Yogurt
- 1 Small Onion, Chopped
- 1 4 oz Can of Sliced Mushrooms, Drained
- 2 Garlic Cloves, Minced
- 2 Tsp Dried Parsley
- Salt/Pepper to Taste
- 1 Cup Kraft Fat Free Cheddar Cheese, Shredded (1/4 Cup per Serving)
