2BagsFrozen Cauliflower Rice (10 oz Bags)
2BagsFrozen Chopped Broccoli (12 oz Bags)
1/2CupFat Free Chicken Broth
1CanCampbell's Healthy Request Cream of Chicken Soup
1/2CupPlain Fat Free Greek Yogurt
1SmallOnion, Chopped
14 ozCan of Sliced Mushrooms, Drained
2Garlic Cloves, Minced
2TspDried Parsley
Salt/Pepper to Taste
1CupKraft Fat Free Cheddar Cheese, Shredded (1/4 Cup per Serving)
Instructions
Spray your slow cooker with nonstick cooking spray. In a bowl, mix together the cream of chicken soup, garlic, chicken broth, and Greek yogurt until well combined.
Pour the mixture into the slow cooker and set it on low. Add the cubed chicken, onion, chopped broccoli, and seasonings. In the last 45 minutes of cooking, stir in the cauliflower rice and mushrooms. Cover and let it finish cooking.
For best results, keep the cauliflower rice in the refrigerator instead of the freezer before adding it to the slow cooker. Breaking up the rice before adding it will help it cook evenly. Once fully cooked, serve in bowls and top each portion with ¼ cup of shredded cheddar cheese.
