This Quick Low Carb Cheesy Zucchini Bake Recipe is the perfect Weight Watchers recipe that will make a zucchini lover out of anybody. This healthy cheesy zucchini bake recipe is done in under 1 hour start to finish, including prep time.
Zucchini is such a versatile vegetable. And since zucchini is always 0 Points on all Weight Watchers Plans, it’s been a favorite of ours this summer.

Quick Low Carb Cheesy Zucchini Bake Recipe
INGREDIENTS:
3 Cups of Sliced Zucchini (See FAQs below)
1 Pint of Cherry or Grape Tomatoes, Halved
1/2 Teaspoon of Dried Basil
1/4 Teaspoon of Salt
1 Cup of Kraft Fat Free Shredded Mozzarella Cheese
1 1/4 Cup of Kraft Fat Free Shredded Cheddar Cheese
Fresh Parsley or Herb of Your Choice, Optional
Vegetable Baking Spray (I prefer Butter Flavored)
DIRECTIONS:
- Preheat oven to 350 degrees.
- Spray a cast iron round pan or 2 quart shallow baking dish with vegetable cooking spray.
- Toss together the zucchini, tomatoes, basil, salt and fresh herbs, if you are using fresh herbs. Pour everything into the sprayed pan.
- Bake covered with foil for 30 minutes. Remove foil and sprinkle with all the cheese. Return to oven without covering for 10 more minutes. You can add more fresh herbs if you’d like.
- This makes 4 servings. On the WW Program, each serving is 1 Point. Enjoy!

FAQ ABOUT THIS RECIPE FOR QUICK LOW CARB CHEESY ZUCCHINI BAKE:
- How thick should I cut the zucchini slices? 1/4″ slices are perfect – just try to keep all slices uniform in size. Any smaller than 1/4″, your zucchini will get very mushy during the baking time.
- How do I keep the zucchini from getting watery? You can do 1 of 2 things. First, you can simply salt the sliced zucchini on both sides. Lay the zucchini out on double lined paper towels and let them sit for about 10 minutes. Turn them over and do it again for another 10 minutes. Proceed with the recipe. Secondly, you can put all the zucchini slices in a plastic bag that has about 2 Teaspoons of All Purpose Flour in it and shake to coat. Proceed as normal with the recipe.
- If you want this zucchini recipe to be less cheesy, simply reduced the amount.
