Quick Low Carb Cheesy Zucchini Bake Recipe

This quick to prep and bake Low Carb Cheesy Zucchini Bake Recipe is a delicious Weight Watchers side dish at only 1 SP per serving.
  • 3 Cups of Sliced Zucchini (See FAQs below in blog post)
  • 1 Pint of Cherry or Grape Tomatoes, Halved
  • ½ Teaspoon of Dried Basil
  • ¼ Teaspoon of Salt
  • 1 Cup of Kraft Fat Free Shredded Mozzarella Cheese
  • 1¼ Cup of Kraft Fat Free Shredded Cheddar Cheese
  • Fresh Parsley or Herb of Your Choice, Optional
  • Vegetable Baking Spray (I prefer Butter Flavored)
  1. Preheat oven to 350 degrees.
  2. Spray a cast iron round pan or 2 quart shallow baking dish with vegetable cooking spray.
  3. Toss together the zucchini, tomatoes, basil, salt and fresh herbs, if using. Pour everything into the sprayed pan.
  4. Bake covered with foil for 30 minutes. Remove foil and sprinkle with all the cheese. Return to oven without covering for 10 more minutes. You can add more fresh herbs if you'd like.
