What ingredients do I need to make Quick & Easy Stuffed Caprese Balsamic Chicken Breasts?
Chicken – Boneless and Skinless Chicken Breasts. Don’t use thin sliced Chicken Breasts.
Tomatoes – Pick out red ripe (fresh) tomatoes to use for stuffing the chicken breasts. Roma or Plum tomatoes work best and some people even use sun dried tomatoes for stuffing.
Cheese – You will use Mozzarella cheese for stuffing the chicken breasts. Get a block of mozzarella cheese (not shredded) or a fresh ball of Mozzarella since you will need a thick slice for each breast. You can even try using Burrata cheese which is actually made from Mozzarella and Cream. It’s delicious. Burrata cheese is also a great cheese to use in Caprese Salad in place of Mozzarella Cheese.
Basil – Use fresh Basil Leaves
Olive Oil – I use Extra Virgin Olive Oil for cooking.
Balsamic Vinegar – Not only is this delicious – but it’s great for your healthy as well! It’s known for lowering cholesterol and blood pressure as well as reducing blood sugar.
Spices – Dried Oregano, Dried Basil, Salt, Pepper

How to Make Quick & Easy Stuffed Caprese Balsamic Chicken Breasts
- Using a very sharp knife, cut a slit into the side of the chicken breasts going 3/4 of the way through.
- Season the chicken breasts with all the spices.
- Place 1 thick slice of Mozzarella Cheese that has been halved into the chicken breast.
- Top with the tomatoes.
- Add in the basil leaves.
- Seal the sides of the chicken breasts with wooden (soaked) toothpicks (diagonally) to hold in all the deliciousness.
- Heat oil in a large oven safe pan over medium heat.
- Sear chicken breasts on both sides.
- Add the sweetened balsamic mixture to the pan with the chicken breasts.
- Put the pan into the oven and bake until cooked through.
- Remove toothpicks and drizzle any remaining sauce over the chicken breasts and devour.
