Quick & Easy Stuffed Caprese Balsamic Chicken Breasts

- 24 Ounces of Boneless and Skinless Chicken Breasts (About 6 Ounces each)
- 2 - 3 Large Ripe Roma Tomatoes or Plum Tomatoes
- 16 Ounces of Part Skim Mozzarella Cheese Block
- 16 Fresh Basil Leaves
- 1.5 Teaspoons of Dried Basil AND Dried Oregano
- Salt/Pepper to Taste
- ½ Cup of Balsamic Vinegar
- 2 Tablespoons of Lakanto Brown Sugar Replacement
- 2 Tablespoons of Extra Virgin Olive Oil
- Vegetable Spray
- Preheat oven to 350 degrees.
- Using a very sharp knife, cut a slit into the side of the chicken breasts going ¾ of the way through.
- Season the chicken breasts with all the spices on both sides.
- Place 1 thick slice of Mozzarella Cheese that has been halved into the chicken breast.
- Top with the tomatoes.
- Add in the basil leaves.
- Seal the sides of the chicken breasts with wooden (soaked) toothpicks (diagonally) to hold in all the deliciousness.
- Spray oven safe pan with vegetable cooking spray liberally. Then add in the oil.
- When oil is hot, cook chicken breasts for about 3 minutes on each side.
- Combine the balsamic vinegar and Lakanto Brown Sugar Replacement and mix together.
- Add the sweetened balsamic mixture to the pan with the chicken breasts.
- Put the pan into the oven and bake for 15 to 20 minutes until cooked through.
- Remove toothpicks and drizzle any remaining sauce over the chicken breasts and devour.
