Quick & Easy Stuffed Caprese Balsamic Chicken Breasts

Ingredients
  • 24 Ounces of Boneless and Skinless Chicken Breasts (About 6 Ounces each)
  • 2 - 3 Large Ripe Roma Tomatoes or Plum Tomatoes
  • 16 Ounces of Part Skim Mozzarella Cheese Block
  • 16 Fresh Basil Leaves
  • 1.5 Teaspoons of Dried Basil AND Dried Oregano
  • Salt/Pepper to Taste
  • ½ Cup of Balsamic Vinegar
  • 2 Tablespoons of Lakanto Brown Sugar Replacement
  • 2 Tablespoons of Extra Virgin Olive Oil
  • Vegetable Spray
Instructions
  1. Preheat oven to 350 degrees.
  2. Using a very sharp knife, cut a slit into the side of the chicken breasts going ¾ of the way through.
  3. Season the chicken breasts with all the spices on both sides.
  4. Place 1 thick slice of Mozzarella Cheese that has been halved into the chicken breast.
  5. Top with the tomatoes.
  6. Add in the basil leaves.
  7. Seal the sides of the chicken breasts with wooden (soaked) toothpicks (diagonally) to hold in all the deliciousness.
  8. Spray oven safe pan with vegetable cooking spray liberally. Then add in the oil.
  9. When oil is hot, cook chicken breasts for about 3 minutes on each side.
  10. Combine the balsamic vinegar and Lakanto Brown Sugar Replacement and mix together.
  11. Add the sweetened balsamic mixture to the pan with the chicken breasts.
  12. Put the pan into the oven and bake for 15 to 20 minutes until cooked through.
  13. Remove toothpicks and drizzle any remaining sauce over the chicken breasts and devour.
