My husband is so ecstatic that he gets to eat avocados every since he began Keto.
He used to spread avocado over his toast, that is when he used to eat toast. Now he eats guacamole as a side with every meal practically. And, last week our local grocery store had them for $1 each. So he stocked up.
So, in an effort to keep him happy with his new way of eating, aside from losing weight every single week, I came up with a new recipe using all of these avocados. I think you will enjoy it too.
If you did not know already, avocados are full of vitamins and nutrients – over 20 to be exact. They are super low in fiber and high in fat which as you know, keeps you feeling fuller longer. From what my husband has said, they are the cornerstone food of the Keto diet.

Below you will find the Keto Lovers Crab Stuffed Avocados recipe. Also, feel free to trade the crab for tuna, salmon, chicken or even egg salad.Â
Keto Lovers Crab Stuffed Avocados Recipe
5 Avocados, Peeled & Cut in HalfÂ
2 Cans of Crabmeat, Drained (6 oz cans)
1/2 Cup of Full Fat Mayonnaise
2 Tablespoons of Lemon Juice
1/8 Cup of Shallot, Cut Very Small
Salt/White or Black Pepper to Taste
2 Lemons, Quartered
DIRECTIONS:
- Slice one avocado in half and scoop out contents, throwing away the pit. Slice both halves and then cube them small. Set aside.
- In a bowl, add crabmeat, red onion, lemon juice, salt, pepper and mayonnaise. Mix well. Add in cubed avocado.
- Slice the remaining 4 avocadoes in half, removing and discarding pits. Scoop some of the avocado out of each half and set aside. Don’t go too deep, just make a well.
- Preheat broiler. Line a baking sheet with parchment paper and put avocado halves on it and stuff with crab mixture. Broil 5 minutes and remove. Serve with extra scooped avocado on the side along with lemon wedges.
- This makes 4 servings – 2 halves per person. Each serving is 5.4 Net Carbs, 11.7 Grams of Fiber, 11.7 Grams of Protein and 47.1 Grams of Fat.
