My husband asked me if I could come up with a Keto/Low Carb friendly recipe for a cream of asparagus type of soup.
So, I came up with one that he absolutely loves. And, I went even further than just using asparagus, cream and a few other ingredients. I added Keto friendly nuts: toasted walnuts to be exact. The verdict in his words: “creamy, nutty decadence”. Then I told him that this was his Valentine’s gift. Yup, a huge vat of the most delicious, creamiest, nuttiest asparagus soup for Keto lovers ever! With a big red bow, of course.
And, so I thought I would share it with all the other Keto, Low Carb lovers of delicious creamy, nutty aspargus soups out there too.Â

Most Delicious Creamiest, Nuttiest Asparagus Soup Ever
2 Tablespoons of Avocado Oil
1/2 Cup of Sliced Green Onions
2 Garlic Cloves, Minced
3 Cups of Asparagus, Woody Ends Removed & Remainder Chopped
2 Cups of Chicken Bone Broth
1/2 Cup of Toasted Walnuts
1/2 Cup of Heavy Cream
3 Tablespoons of Liquid Aminos
Salt/Pepper to Taste
Garnish with Additional Aspargus Spears & Green Onion, Optional
DIRECTIONS:
- Heat 2 tablespoons of avocado oil in a sautepan over medium high heat. When pan is sizzling, add in green onions and minced garlic cloves. Season to taste with salt and pepper. Cook until green onions begin to wilt – about 5 minutes.Â
- Add in the sliced asparagus that have the woody ends removed. Add in bone broth and bring to a light rolling boil. Reduce heat and cover pan for about 10 minutes until asparagus is tender. Remove from heat.
- Toast walnuts using this tool or in oven*. Add entire saute pan in a blender and process until smooth. Add in nuts. Return to saucepan and stir in heavy cream and liquid aminos. Season again with salt/pepper to taste. Heat through but do not boil.
- This makes 4 cups. Per serving, it is 7 Net Carbs, 413 Calories, 11.5 Grams of Protein and 38.3 grams of Fat. Enjoy!Â
