Now that colder weather is here and a lot of our time is spent indoors, what better hearty dinner is there than lasagna? But that can take up a huge chunk of our daily SmartPoints. Unless you make this Healthy Zucchini Lasagna Recipe + Weight Watchers Recipe where a huge serving is only 2 SP on the Blue Plan, 4 SP on the Green Plan and only 1 SP on the Purple Plan. How great is that!

Healthy Zucchini Lasagna Recipe + Weight Watchers Recipe
INGREDIENTS:
Slow Cooker Italian Meat Gravy (Recipe Below)
1 Large Egg, Beaten
1.5 Cups of Fat Free Cottage Cheese
1/2 Teaspoon Each of Dried Basil, Dried Oregano, Dried Thyme
Salt/Pepper to Taste
4 Medium Zucchini
3 Tablespoons of All Purpose Flour
2 1/4 Cups of Kraft Fat Free Mozzarella Cheese
Vegetable Cooking Spray
DIRECTIONS:
- Make 1 recipe of the Slow Cooker Italian Meat Gravy (Recipe below).
- In a bowl mix the eggs and cottage cheese together well. Add all the herbs and salt/pepper to taste. Set aside.
- Trim ends of zucchini, cut lengthwise in 1/4″ slices. Layer half of the zucchini slices in a 13 x 9 inch pan that has been sprayed with vegetable cooking spray. Sprinkle 1.5 tablespoons of the flour on top of the cooking spray.
- Top with the cottage cheese mixture and cover the cheese mixture with as much meat sauce as you like. Top with the remaining zucchini slices. Sprinkle remaining flour on top. Spread with more meat sauce to taste.  Sprinkle with 1 1/4 cups of the fat free shredded cheese.
- Bake uncovered at 375 degrees for about 35 minutes. Sprinkle with remaining 1 cup of shredded cheese and bake for 5 minutes longer. Let stand for 10 minutes before serving.
- This makes 6 huge servings and is 2 SP on the Blue Plan, 4 SP on the Green Plan and only 1 SP on the Purple Plan. SmartPoints values includes the Slow Cooker Italian Meat Gravy points too. Enjoy!

3 Cans of Tomato Puree (28 oz cans)
1 (5-6) oz Can of Tomato Paste + 1 Can of Water (Use Tomato Paste Can)
1 Teaspoon Each of the following:
Garlic Powder, Dried Oregano, Dried Basil, Dried Parsley, Dried Thyme, Fresh Cracked Black Pepper & Salt
Up to 2.5 Tablespoons of Granulated Splenda (More or less depending on your taste)**
2 Pounds of Ground Turkey Breast, Browned in Pan and Drained & Minced
1 Each Finely Chopped: White Onion, Green Pepper & 2 Garlic Cloves (Browned)
Vegetable Cooking Spray
Garnish with Chopped Tomatoes & Fresh Herbs, Optional
DIRECTIONS:
- Spray your slow cooker with vegetable cooking spray.
- Combine the tomato purees, paste, dried seasonings, and Splenda into slow cooker and stir to combine.
- In a large saute pan that has been sprayed with vegetable cooking spray, brown ground turkey breast along with onion, green pepper and garlic.
- Drain well. Mince meat and vegetables in a food processor and put into slow cooker with the tomato mixture.
- Put lid on slow cooker and turn on low for 6 hours. Garnish with Chopped Tomatoes & Fresh Herbs, Optional
- This entire mixture is 0 SP on the Blue & Purple Plans. On the Green Plan, a 1 Cup Serving is 2 SP. Enjoy!
