Healthy Zucchini Lasagna Recipe

Ingredients
  • Slow Cooker Italian Meat Gravy (Recipe Below)
  • 1 Large Egg, Beaten
  • 1.5 Cups of Fat Free Cottage Cheese
  • ½ Teaspoon Each of Dried Basil, Dried Oregano, Dried Thyme
  • Salt/Pepper to Taste
  • 4 Medium Zucchini
  • 3 Tablespoons of All Purpose Flour
  • 2¼ Cups of Kraft Fat Free Mozzarella Cheese
  • Vegetable Cooking Spray
Instructions
  1. Make 1 recipe of the Slow Cooker Italian Meat Gravy (Recipe below).
  2. In a bowl mix the eggs and cottage cheese together well. Add all the herbs and salt/pepper to taste. Set aside.
  3. Trim ends of zucchini, cut lengthwise in ¼" slices. Layer half of the zucchini slices in a 13 x 9 inch pan that has been sprayed with vegetable cooking spray.  Sprinkle 1.5 tablespoons of the flour on top of the cooking spray.
  4. Top with the cottage cheese mixture and cover the cheese mixture with as much meat sauce as you like. Top with the remaining zucchini slices. Sprinkle remaining flour on top. Spread with more meat sauce to taste.  Sprinkle with 1¼ cups of the fat free shredded cheese.
  5. Bake uncovered at 375 degrees for about 35 minutes. Sprinkle with remaining 1 cup of shredded cheese and bake for 5 minutes longer. Let stand for 10 minutes before serving.
