Healthy Zucchini Bread Recipe
INGREDIENTS:
2 Teaspoons of Extra Virgin Olive Oil
1 Large Egg, Room Temperature
2 Teaspoons of Vanilla Extract
1/2 Cup Unsweetened Almond Milk
2/3 Cup of Nature’s Hollow Sugar Free Honey Substitute
1.5 Cups of Shredded Zucchini (1 Large Zucchini), Squeezed Dry
2 Cups of Oat Flour
1 Teaspoon Each of Cinnamon, Baking Soda + Baking Powder
1/4 Teaspoon Each of Nutmeg, Ginger and Salt

DIRECTIONS:
- Preheat oven to 350 and add parchment paper to an 8 x 4 loaf pan.
- In a large bowl, mix the olive oil, egg, vanilla, honey substitute, almond milk and the zucchini together.
- Add in Oat Flour, spices, baking powder, and the salt to the wet ingredients.
- Pour batter into prepared loaf pan.
- Bake at 350 for 45 minutes or until the top of the bread is golden and inserting a knife or cake tester comes out clean.
- Allow bread to cool for 20 minutes in the pan on a baking sheet.
- Remove from the pan and allow to cool further.
- Cut into 6 thick slices. On the WW Points Plan each slice is 7 Points.  Enjoy!

- Can I freeze the Healthy Zucchini Bread? Absolutely you can. Simply wrap in foil wrap and place in a freezer bag when it’s completely cooled. It will keep for up to 3 months. I guarantee you, it will not last that long!
- If you want to make this Zucchini Bread even healthier, you can substitute the olive oil for the same amount of unsweetened applesauce.
