Easy Healthy Zucchini Recipes

Healthy air Fried Zucchini Tater Tots Recipe
This easy quick Healthy Air Fried Zucchini Tater Tot recipe is kid friendly and the perfect way to sneak some vegetables into their diet so they too can reap the health benefits of zucchini. If you don’t have an air fryer, below are the directions for baking.
INGREDIENTS:
2 Russet Potatoes, Large (Peeled)
3 Cups of Shredded Zucchini (About 2-3 Large Zucchini)
1.5 Teaspoons of Salt
1 Teaspoon Each of Garlic Powder + Onion Powder
Olive Oil Flavored Cooking Spray
DIRECTIONS:
- Grate the potatoes on a box grater over a large bowl. Grate the zucchini in another bowl. Place the zucchini in a clean kitchen towel or flour sack towel to squeeze out the liquid. Once you squeeze all the liquid out, put the zucchini in the potato bowl. Add the salt and garlic + onion powder. Mix it all together with your hands.
- Line a cookie sheet with parchment paper. Scoop out about a tablespoon of the tater tot mixture and form into a cylinder (tater tot shape). Put all the tots on the cookie sheet and then place in your freezer for 10 minutes for them to get firm.
- Remove from the freezer and spray the tots with olive oil flavored cooking spray. Sprinkle a bit more salt onto the tots.
- Set your air fryer to 400 degrees. Working in batches, place the tots in a single layer and bake for 10 minutes or longer if you like them to be deep golden brown.
- This makes about 30 tater tots (depending on the size of your zucchini, potatoes and how big you formed them). Regardless, if you are on the WW Purple Plan, the entire recipe is 0 SmartPoints. If you are on the WW Blue or WW Green Plan, 6 zucchini tots are only 3 SP. Enjoy!

After removing the tater tots from the freezer and spraying with the olive oil flavored cooking spray, bake for about 30 minutes while flipping the tots halfway through baking.

Here’s another sneaky way to get your kid’s to eat their vegetables. Make this Weight Watchers Healthy Stuffed Zucchini recipe for them. This easy healthy zucchini recipe will quickly become a family favorite.
INGREDIENTS:
8 Medium Zucchini (Halved)
2 Pounds of Ground Turkey Breast
Pint of Grape Tomatoes, Halved
1/3 Cup of Kraft Reduced Fat Shredded Parmesan Cheese
2 Tablespoons of Dried Parsley
3 Teaspoons Each of Dried Basil + Oregano
Salt/Pepper to Taste
2 1/4 Cups of Kraft Fat Free Shredded Mozzarella Cheese
Vegetable Cooking Spray
DIRECTIONS:
- Preheat oven to 350 degrees. Cut each zucchini in half lengthwise. Scoop out the pulp, leaving a 1/4″ shell. Chop up all the pulp.
- In a large microwave safe dish, lay out all the zucchini shells. Microwave them covered for 2-3 minutes on high or until they are tender.
- In a large skillet that has been sprayed with vegetable cooking spray, add the zucchini pulp and ground turkey breast. Cook for about 8 minutes or more until the turkey breast is browned. Break the ground turkey breast up in small pieces as you go along. Drain. Stir in tomatoes, Parmesan Cheese, salt/pepper and all the herbs.
- Arrange the zucchini shells in a 13 x 9 baking pan (or 2 if you need to) that has been sprayed with the vegetable cooking spray. Spoon the turkey breast mixture into the zucchini shells evenly.
- Bake, covered with foil, for 20 minutes. Remove foil and sprinkle Kraft Shredded Mozzarella Cheese over the zucchini and bake uncovered for 5 more minutes or until the cheese is melted.
- This makes 4 servings with 2 Stuffed Zucchini per person. Each serving is 2B. 4G. 2P and that is for 2 Stuffed Zucchini Halves. Enjoy!

FAQS ABOUT HEALTHY STUFFED ZUCCHINI:
- Can I freeze this? No. Especially since the zucchini will turn to mush. However, I think it’s perfectly fine to precook the meat for stuffing along with the spices. Then, when you do make the recipe, simply add the zucchini pulp to the meat mixture and continue with cooking the zucchini shells.
- If you prefer another meat flavor besides Italian, you can make the ground turkey breast Taco flavored for Taco Tuesday. Substitute the mozzarella cheese for fat free shredded cheddar too. Switch the Italian seasonings out for a packet of Taco Seasoning.

You can never go wrong with a quick bread recipe. Especially a Healthy Zucchini Bread Recipe that is perfect for a simple snack, kid’s lunch boxes or even an easy breakfast on Weight Watchers. This Healthy Zucchini Bread Recipe is healthy eating at its best – low in sugar, low in fat and gluten free too.
INGREDIENTS:
2 Teaspoons of Extra Virgin Olive Oil
1 Large Egg, Room Temperature
2 Teaspoons of Vanilla Extract
1/2 Cup Each of Unsweetened Almond Milk
2/3 Cup of Nature’s Hollow Sugar Free Honey Substitute
1.5 Cups of Shredded Zucchini (1 Large Zucchini), Squeezed Dry
2 Cups of Oat Flour
1 Teaspoon Each of Cinnamon, Baking Soda + Baking Salt
1/4 Teaspoon Each of Nutmeg, Ginger and Salt

DIRECTIONS:
- Preheat oven to 350 and add parchment paper to an 8 x 4 loaf pan.
- In a large bowl, mix the olive oil, egg, vanilla, honey substitute, almond milk and the zucchini together.
- Add in Oat Flour, spices, baking powder, baking salt and the salt to the wet ingredients.
- Pour batter into prepared loaf pan.
- Bake at 350 for 45 minutes or until the top of the bread is golden and inserting a knife or cake tester comes out clean.
- Allow bread to cool for 20 minutes in the pan on a baking sheet.
- Remove from the pan and allow to cool further.
- Cut into 6 thick slices. Per slice is is 6 SP on Blue, 6 SP on Green and on Purple I count it as 2 SP per slice. Why? Because on the Purple Plan Unflavored Oatmeal is 0 SP. When I eat Oatmeal, I eat 2 packets of oatmeal and it’s 0 SP, so basically, per Zucchini Bread slice, there may be 2-3 Packets of Oatmeal in it, so why count it? That’s just me, but if you want to do it by putting it in the calculator it’s 6 SP on Purple too. - Can I freeze the Healthy Zucchini Bread? Absolutely you can. Simply wrap in foil wrap and place in a freezer bag when it’s completely cooled. It will keep for up to 3 months. I guarantee you, it will not last that long!
- If you want to make this Zucchini Bread even healthier, you can substitute the olive oil for the same amount of unsweetened applesauce.
- Feel free to add chopped walnuts and/or Lily’s No Sugar Added Dark Chocolate Chips to the recipe. Just remember to adjust the SmartPoints.
- If you’d like to substitute the sugar free honey, you can easily replace the same amount of it with sugar free maple syrup. Points may need to be adjusted if you chose to do so.

Here’s yet another way to use up your abundant crop of zucchini – in a healthy cheesy and meaty zucchini lasagna dish.
INGREDIENTS:
Slow Cooker Italian Meat Gravy (Recipe Below)
1 Large Egg, Beaten
1.5 Cups of Fat Free Cottage Cheese
1/2 Teaspoon Each of Dried Basil, Dried Oregano, Dried Thyme
Salt/Pepper to Taste
4 Medium Zucchini
3 Tablespoons of All Purpose Flour
2 1/4 Cups of Kraft Fat Free Mozzarella Cheese
Vegetable Cooking Spray
DIRECTIONS:
- Make 1 recipe of the Slow Cooker Italian Meat Gravy (Recipe below).
- In a bowl mix the eggs and cottage cheese together well. Add all the herbs and salt/pepper to taste. Set aside.
- Trim ends of zucchini, cut lengthwise in 1/4″ slices. Layer half of the zucchini slices in a 13 x 9 inch pan that has been sprayed with vegetable cooking spray. Sprinkle 1.5 tablespoons of the flour on top of the cooking spray.
- Top with the cottage cheese mixture and cover the cheese mixture with as much meat sauce as you like. Top with the remaining zucchini slices. Sprinkle remaining flour on top. Spread with more meat sauce to taste.  Sprinkle with 1 1/4 cups of the fat free shredded cheese.
- Bake uncovered at 375 degrees for about 35 minutes. Sprinkle with remaining 1 cup of shredded cheese and bake for 5 minutes longer. Let stand for 10 minutes before serving.

3 Cans of Tomato Puree (28 oz cans)
1 (5-6) oz Can of Tomato Paste + 1 Can of Water (Use Tomato Paste Can)
1 Teaspoon Each of the following:
Garlic Powder, Dried Oregano, Dried Basil, Dried Parsley, Dried Thyme, Fresh Cracked Black Pepper & Salt
Up to 2.5 Tablespoons of Granulated Splenda (More or less depending on your taste)**
2 Pounds of Ground Turkey Breast, Browned in Pan and Drained & Minced
1 Each Finely Chopped: White Onion, Green Pepper & 2 Garlic Cloves (Browned)
Vegetable Cooking Spray
Garnish with Chopped Tomatoes & Fresh Herbs, Optional
DIRECTIONS:
- Spray your slow cooker with vegetable cooking spray.
- Combine the tomato purees, paste, dried seasonings, and Splenda into slow cooker and stir to combine.
- In a large saute pan that has been sprayed with vegetable cooking spray, brown ground turkey breast along with onion, green pepper and garlic.
- Drain well. Mince meat and vegetables in a food processor and put into slow cooker with the tomato mixture.
- Put lid on slow cooker and turn on low for 6 hours. Garnish with Chopped Tomatoes & Fresh Herbs, Optional
