Now that school time is here again, I have the perfect healthy on the go breakfast: Air Fryer Healthy Homemade Strawberry Pop Tarts. YUM! And they’re not just for kids – who doesn’t love Pop Tarts?
All of the ingredients are healthy and this recipe can be made ahead of time and these toaster pastries are just plain delicious.
Also, if you are following the WW Program, each strawberry filled and smothered-in-icing Pop Tart is only 5 Points! A store bought Strawberry Pop Tart is 8 Points and full of preservatives and just not good for you.

What ingredients do I need to make Air Fryer Healthy Homemade Strawberry Pop Tarts?
- Container of Fresh Strawberries
- Monkfruit Classic Sweetener
- Pie Crust Ingredients: Flour, Lakanto Classic Monkfruit Sweetener, Water, Reduced Calorie Margarine
- Monkfruit Powdered Sweetener
- Fresh Lemon Juice
- Multicolor Sprinkles (or Jimmies if you are from the East Coast)
- Pink/Red Liquid Food Coloring, Optional but Pretty
- Vegetable Cooking Spray
How easy is it to make Air Fryer Healthy Homemade Strawberry Pop Tarts?
- Quarter the strawberries and add the Monkfruit Classic Sweetener too. Stir and combine. Put in microwave.
- Combine all the pie dough ingredients into a food processor and roll out the dough into circles and cut into 16 rectangles. Add the strawberry filling. Add water to sides of the rectangles then top with the remaining 8 rectangles. Seal edges and coat with cooking spray.
- Preheat your air fryer and working in batches cook rectangles until golden brown.
- Cool them completely and make icing. Tint icing with pink food coloring and top with sprinkles. Enjoy!
Detailed Instructions on Making Air Fryer Healthy Homemade Strawberry Pop Tarts
- 16 oz Strawberries, Quartered (Almost 4 Cups)
- ½ Cup Lakanto Classic Monkfruit Sweetener
- 2 Cups of All Purpose Flour
- 2 Tablespoons of Lakanto Classic Monkfruit Sweetener
- 6 Tablespoons of Reduced Calorie Margarine, Chilled and Cut Up
- 3-5 Tablespoons of Water
- 1 Cup of Lakanto Powdered Monkfruit Sweetener
- 3 Teaspoons of Fresh Lemon Juice
- Multicolor Sprinkles/Jimmies
- Pink/Red Food Coloring, Optional
- Vegetable Cooking Spray
- In a large microwavable bowl, add quartered strawberries and sprinkle with ½ cup of Classic Monkfruit Sweetener. Let it sit for 15 minutes while stirring every few minutes. Put in microwave for about 10 minutes while stirring halfway through. Once mixture is shiny, take out of microwave and set on counter to cool for a ½ hour.
- Combine flour and 2 tablespoons of Lakanto Classic Sweetener in food processor. Add margarine and process until mixture resembles coarse meal. Add in water 1 tablespoon at a time and process until the dough is manageable. Divide dough in half.
- On a lightly floured surface, roll out both pie crusts to 12" circles. Then cut 8 pieces of dough from each circle. Form into (3" x 4") into rectangles.
- Into the centers of 6 of the rectangles, add about 1 to 1.5 tablespoons of the strawberry mixture. But leave a ½" border around the 4 edges. Brush the edges of the rectangles with some water and then put the other 8 rectangles on the top of the strawberry mixture. Using a fork, press all the edges to seal.
- Now spray the tops of the rectangles with vegetable cooking spray.
- Preheat the air fryer to 350 degrees and add the rectangles in batches. "Fry" for about 10 minutes OR until golden brown on top. Fry the next batch of pop tarts and cool all of them on a wire rack for 30 minutes.
- In a bowl, whisk together the Powdered Monkfruit Sweetener and the lemon juice. Add in food coloring if using and combine.
- Spoon icing over the pop tarts and then add sprinkles.

Tips for Making Homemade Healthy Strawberry Pop Tarts
- You can make your pie dough the day before and store in the refrigerator. Actually, the dough is a lot easier to work with when it is cool.
- If you want to skip making the Pop Tart Dough, you can substitute with the Pillsbury Refrigerated Pie Crust. However, using the ready made pie dough will make the WW Points go up to 12 Points per Pop Tart. However, it will still be healthier than store bought Pop Tarts/Toaster Pastries.
- The strawberry filling can also be made ahead of time and stored covered in the refrigerator.
- You can substitute the strawberry filling with blueberry filling.
How do I store Homemade Air Fryer Healthy Pop Tarts?
These are best on the day you make them. However you can wrap any remaining Pop Tarts in foil and store in the refrigerator in a plastic bag. If you want, you can remove them from the foil and simply reheat in the microwave or toaster oven.
