Healthy Shrimp Pierogi Casserole

This Healthy Shrimp Pierogi Casserole is a lighter twist on classic comfort food. Tender potato and cheese pierogies bake in a creamy garlic sauce with juicy shrimp and parmesan for an easy weeknight dinner that still feels indulgent. Perfect for meatless dinners or when you want something hearty without red meat.

Ingredients

  • 2 16 oz Boxes of Mrs. T's Pierogies (Potato & Cheese)
  • 2 lbs Large Shrimp, Peeled, Deveined and Tails Removed
  • 2 Tbl Olive Oil
  • 3 Cloves Garlic, Minced
  • 1.5 Cups Fat Free Half and Half
  • 1/2 Cup Fat Free Chicken Broth or Vegetable Broth
  • 1/2 Cup Grated Parmesan Cheese
  • 1/2 Tsp Salt and Pepper
  • 1/2 Tsp Italian Seasoning
  • 1 Tbl Lemon Juice
  • 2 Tbl Fresh Chopped Parsley
  • 1/2 Cup Shredded Mozzarella (Optional)

Instructions

  • Preheat oven to 375°F. Lightly grease a 9x13 baking dish. Arrange frozen pierogies evenly in the prepared baking dish. No need to boil first. In a large skillet over medium heat, add olive oil and sauté garlic for about 30 seconds until fragrant.
  • Stir in half-and-half, broth, parmesan, salt, pepper, and Italian seasoning. Simmer 3–4 minutes until slightly thickened. Remove from heat and stir in lemon juice.
  • Scatter raw shrimp evenly over the pierogies. Pour the garlic cream sauce evenly over everything. If using mozzarella, sprinkle lightly over the top.
  • Bake uncovered for 25–30 minutes, or until shrimp are pink and cooked through and the sauce is bubbling around the edges. Let rest 5 minutes before serving. Sprinkle with fresh parsley before serving.
