- 3 Tbl Light Butter, Melted
- 1/3 Cup Lakanto Monkfruit Sweetener (or sweetener of choice)
- 1 Large Egg
- 1/3 Cup Sugar Free Rainbow Sprinkles (use jimmies) Link in Post
Instructions
- Preheat Oven & Prep Pan Preheat your oven to 350°F. Spray a 13 x 9 inch metal baking pan with cooking spray and set aside.
- Mix Wet Ingredients In a large bowl, whisk together the Greek yogurt, milk, melted light butter, monkfruit sweetener, and egg until smooth.
- Add Dry Ingredients Stir in the vanilla protein powder, almond flour, coconut flour, baking powder, and salt. Mix until a thick batter forms.
- Fold in Sprinkles Gently fold in the rainbow sprinkles, being careful not to overmix.
- Spread Batter Spread the thick batter evenly into the prepared 13 x 9 pan, smoothing out the top with a spatula.
- Bake Bake for 22–26 minutes, or until the edges are lightly golden and the top looks just set. Avoid overbaking for the best texture.
