Instructions
Preheat Oven & Prep Pan Preheat your oven to 350°F. Spray a 13 x 9 inch metal baking pan with cooking spray and set aside.
Mix Wet Ingredients In a large bowl, whisk together the Greek yogurt, milk, melted light butter, monkfruit sweetener, and egg until smooth.
Add Dry Ingredients Stir in the vanilla protein powder, almond flour, coconut flour, baking powder, and salt. Mix until a thick batter forms.
Fold in Sprinkles Gently fold in the rainbow sprinkles, being careful not to overmix.
Spread Batter Spread the thick batter evenly into the prepared 13 x 9 pan, smoothing out the top with a spatula.
Bake Bake for 22–26 minutes, or until the edges are lightly golden and the top looks just set. Avoid overbaking for the best texture.
Cool & Slice Allow the blondies to cool completely in the pan before slicing into 12 even squares. Serve or Store Store in the refrigerator for up to 7 days or freeze individually for longer storage.
