- 1 Large Onion Diced
- 3 Carrots Diced
- 3 Celery Stalks Diced
- 4 Cloves Garlic Minced
- 2 Tsp Paprika
- 1 Tsp Cayenne Pepper
- 2 Tsp Dried Thyme
- 2 Bay Leaves
- 2 Cans Rotel Diced Tomatoes (Undrained)
- 1 4 oz Jar of Diced Pimentos Drained, but reserve some for garnish
- 6 Cups Fat Free Vegetable Broth (or Chicken)
- 2 Cups Fat Free Half and Half
- Salt/Pepper to Taste
- Fresh Parsley or Herbs of Your Choice, Optional
- Vegetable Cooking Spray
