Quick tip: If you are going to make this stew, do not buy the beef just for making this stew. Use leftover beef if you have made a roast – you only need a few leftover slices and balance the rest of the stew with more vegetables and egg noodles. I also have used ground turkey in this as well and it’s delicious. Another couple of tips for you – I never buy dried mushrooms for this. They are way too expensive. I just add a bag of frozen or canned mushrooms. And, you can serve this over mashed potatoes, rice and even elbow macaroni. Perfect!

Easy Cauliflower Celeriac Soup with Bacon
This recipe is by CookEatPaleo.com. This soup is so creamy and delicious. If you want to make it without celeriac like I do, just replace the celeriac with 1 cup of peeled, thick chopped parsnips (like the size of baby carrots). I also don’t buy ghee since this soup would be the only use I have for it. Instead, I use about 2.5-3 tablespoons of butter (not margarine). Delicious!
