Ingredients

  • 2 Cups Cooked Shredded Chicken Breast or Rotisserie Chicken Breast
  • 1 Cup Black Beans, Drained and Rinsed
  • 1 Cup Fat Free Salsa
  • 2 Cups/Bags Quest Loaded Taco Chips
  • 2 Cups Kraft Fat Free Cheddar Cheese Shredded
  • 2 Tbl Fresh Cilantro, Chopped
  • Sliced Jalapenos, Optional but DELICIOUS!
  • Fat Free Sour Cream, Optional

Instructions

  • Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, layer the shredded chicken, black beans, and salsa.
  • Spread the corn chips evenly over the top, then sprinkle with shredded cheddar cheese. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with chopped cilantro, sliced jalapeños, and a dollop of sour cream if desired. Serve warm and enjoy the zesty flavors!
