Ingredients
2CupsCooked Turkey Breast, Shredded or Chunked
8OuncesSoba Noodles, Cooked
2Bell Peppers, Thinly Sliced
2CupsSnap Peas
4Green Onions, Sliced
2TblSesame Seeds,. Garnish
3TblSoy Sauce
1TblFreshly Grated Ginger
2ClovesGarlic Minced
2TspSesame Oil
1TblOlive Oil
Red Pepper Flakes, Optional
Instructions
In a small bowl, whisk together soy sauce, ginger, garlic, sesame oil, and red pepper flakes (if using) to create the sauce. Set aside.
Heat olive oil in a large skillet or wok over medium-high heat. Add bell pepper, and snap peas, and stir-fry for 3-4 minutes until slightly tender.
Add the shredded turkey and cooked soba noodles, then pour the sauce over everything. Toss to combine and cook for another 2-3 minutes, until heated through. Serve garnished with green onions and sesame seeds.
