Turkey & Veggie Soba Noodle Stir-Fry | Leftover Turkey Recipe

This Turkey & Veggie Soba Noodle Stir-Fry is a quick and healthy way to enjoy leftover roast turkey. With skinless turkey breast, fresh vegetables, and a simple soy-ginger sauce, it’s an ideal meal for transforming holiday leftovers.

Ingredients

  • 2 Cups Cooked Turkey Breast, Shredded or Chunked
  • 8 Ounces Soba Noodles, Cooked
  • 2 Bell Peppers, Thinly Sliced
  • 2 Cups Snap Peas
  • 4 Green Onions, Sliced
  • 2 Tbl Sesame Seeds,. Garnish
  • 3 Tbl Soy Sauce
  • 1 Tbl Freshly Grated Ginger
  • 2 Cloves Garlic Minced
  • 2 Tsp Sesame Oil
  • 1 Tbl Olive Oil
  • Red Pepper Flakes, Optional

Instructions

  • In a small bowl, whisk together soy sauce, ginger, garlic, sesame oil, and red pepper flakes (if using) to create the sauce. Set aside.
  • Heat olive oil in a large skillet or wok over medium-high heat. Add bell pepper, and snap peas, and stir-fry for 3-4 minutes until slightly tender.
  • Add the shredded turkey and cooked soba noodles, then pour the sauce over everything. Toss to combine and cook for another 2-3 minutes, until heated through. Serve garnished with green onions and sesame seeds.
